Back to delicious fall meals on our menu!

Happy fall y’all!

Technically, it’s not quite fall yet, and it’s actually still warm out. But, meal-wise, we’re all in. It’s fall on our menu here at home.

After a pretty lengthy absence here on the blog, I am back at it. Our kitchen is fully functional, although not completely finished (and won’t be for a while) and our kids are back to school- week two, so my schedule is much more normal and structured, our meals are back to normal, and I’m ready to share some great new things with you.

Today’s photo does not do my new recipe any justice at all, but I didn’t realize it until I looked at the picture later on, that I must’ve taken it after we’d eaten all of the broccoli, and there was barely any left on my plate when I snapped the photo that night. (I guess I still wasn’t 100% back in the game at that point last week!)

So you must take my word for it, our word for it. This recipe was simple and amazingly good; a great way to dress up a simple vegetable. Everyone in my family raved about it, and to be honest, it wasn’t even the recipe I started out looking to make. I stumbled on it completely by accident.

Just a few recipes I’d put aside to go through “some day.”

When we first emptied our kitchen, I had a whole big, long countertop of cookbooks to store until I found them a new home. On top of that big pile was a big pile of torn out, pulled out, printed out recipes I’d stuck on top of the pile to go through at some point.

During the summer, after the kitchen work had ended, I found my cookbooks a new home on a couple of closet shelves, but I couldn’t avoid the obvious: I had to go through the pile.

In doing so, I found many new recipes I’d been meaning to try and a whole year’s worth of Gluten Free Living magazines to go through. Some my daughter and I had already tabbed the recipes we wanted to try, and some still needed to be tabbed. Then I needed to pull those recipes out and put all my single recipes into a folder to store on the shelf.

A couple of weeks later, I was looking for a smashed broccoli recipe from Whole Foods that I’d tried a couple of years ago, and I went to my folder and pulled it out. Turns out though, although it was on the same paper as the one I’d gone in for, this broccoli recipe wasn’t the same one. Instead, it was for a Broccoli Parmesan side dish. It looked good though, easy and it looked like something everyone would like so instead of hunting around for the other recipe, I tried this one out. It said right on it that we’d tried it before, but I had no memory of it.

Everyone loved it. They all thought for sure I’d never made it before and all requested that I make it again. Being such a simple recipe, I told them I definitely could do a repeat performance, even if this might have been a repeat already.

So, although you can’t quite get a good look at it here, since we’d eaten most of it by the time I took the photo, you can get the general idea, and then when you make it, you can get the full picture.

Garlic Parmesan Broccoli

Ingredients

1/2 Broccoli

1 tsp. minced garlic

1/3 cup grated Parmesan cheese

 

Instructions

Cook broccoli to your preference. Add oil to saucepan.

Add broccoli, minced garlic and Parmesan cheese. Cook until broccoli is coated.

Enjoy!

“Oh yay! This is my favorite broccoli!”

I kid you not. Those words were spoken at dinnertime tonight when I put this side dish on the dinner table.

This broccoli recipe has in fact, become a new favorite. It might even be neck and neck in line with this one as a favorite broccoli side dish.

We were given this recipe at our local Whole Foods store one Saturday afternoon. Although I don’t do a ton of shopping there, I do have a few things that I need to buy that I can only find there, so one afternoon we were all together and we stopped in to pick up those types of things.

Being a Saturday afternoon around lunchtime, the samples were in full swing. Roaming a store, trying out new things, is one of our family’s favorite things to do. On that day we were given samples of a new favorite granola and of this Garlic Parmesan Broccoli. Although my family tends to really like broccoli, they really LOVED this recipe. As we took our samples, the employee at Whole Foods handed us the paper copy of the recipe. I folded it and put it in my purse and kind of forgot about it. It was late January or early February when we were there, and it was probably the end of February when I remembered I had it and tried it out one night. Sometimes when you make something at home after having had it out, it might not come out the same way. This recipe was seemingly impossible to mess up, and it came out great. I don’t always have fresh broccoli on hand, but I use my Pampered Chef hand-held food chopper to chop frozen broccoli florets after they’re cooked, and it works out great.

And so, tonight when I made it again and I got the exclamation that this is the favorite broccoli recipe, I knew I had to share it with you today. It’s fast and easy and delicious. There’s almost never anything left over, which is always a good sign of a great recipe. I also like that although we got it from Whole Foods, which tends to have a reputation for being very expensive, this particular recipe is very budget-friendly. You can use frozen broccoli, a jar of minced garlic and sprinkle cheese, or you can use fresh broccoli, fresh garlic and fresh grated cheese, depending what your budget looks like and what you happen to have on hand. You can also do any combination of fresh and not fresh also.

Next time you’re looking to spice up a plain side dish like a bowl of steamed broccoli, give this one a try! You never know, you might find that your kids have a favorite broccoli too!

What’s for Dinner Wednesday: Chicken, Broccoli, Cauliflower Casserole

On Saturday, January 24 my husband and I ran to the store to pick up “a few things” to get us through “a few days” until we could get out to do a bigger shopping. It was the day after pay day, and when we’d normally be doing a big shopping, but we hadn’t had a chance to sit down and do our normal two week menu, or to make a shopping list.

We went through the store, picking things up here and there that we knew for sure we were out of and that we knew we could use to put together several meals with. Meats, fresh fruits and veggies; things of that nature all went into the cart.

In the back of our minds, we knew that a big snow storm was coming and just the night before, we’d seen the report that it could be “historic,” whatever that meant.

Well who knew we’d be snowed in for days and days? By the time a week had gone by, we were already expecting another storm, and we were getting a little low on groceries, but really not doing too badly. It didn’t really seem necessary to do a bigger shopping at this point, we were so close to the end of the pay cycle, another check would soon be coming.

And besides, as true New Englanders, we had enough milk and bread to sink a boat. A cruise ship, actually. At the very least, we could have sandwiches galore until the cows came home.

As the second week wound down, I was really being creative with our meals. I had a few things left to work with and I hopped onto Pinterest to do a search. I typed in Chicken, Broccoli, and Cauliflower into the search button and waited to see what came up. I had fresh broccoli crowns and a whole head of cauliflower in my fridge still, as well as a bag of chicken tenderloins in the freezer. You can do a lot with those three ingredients, as it turns out. I scrolled and pinned, scrolled and pinned until I saw a recipe that jumped out at me, simply because it hand Panko bread crumbs on top.

I love Panko bread crumbs.

I found this recipe on a site called Stacey Snacks , and it was listed as being a good idea for using leftover chicken. I didn’t actually have leftover chicken, but I could cook up my tenderloins in bite-sized pieces and just pretend that I did.

The recipe was such that I had to make a few minor modifications, and I’ve listed them below. I had to double it because there are a lot of us who love chicken, broccoli and cauliflower here, and because I wanted to use up the entire head of cauliflower and both of my broccoli crowns.  I had an entire block of cheddar cheese in stock and although I was out of half and half, I had 1% milk, which I could make work with the sauce, which I more than doubled.

Stacey’s recipe was unbelievably good. Our family loved it. We had one sick child that day, so she didn’t eat, but the rest: all thumbs up. I ate this for lunch every day for the following days until it was gone. I’d most definitely make it again. I can’t *wait* to make it again.

Here is her recipe and my modifications along with it. Thanks to Stacey for sharing such deliciousness with us all!

INGREDIENTS

1 cup of small fresh broccoli florets (about 1/2 of a small head) **I used two broccoli crowns**
1 cup of small fresh cauliflower florets (about 1/2 of a small head) **I used a whole head of cauliflower**
1 cup of leftover roast chicken, shredded **I cooked up ten chicken tenderloins in bite-sized pieces**
Japanese panko crumbs for the top
olive oil
kosher salt & pepper

For the Sauce:

3 tbsp of REAL mayonnaise **I used 5 Tbsp.**
1/4 cup of half & half **I used 1 cup of 1 % milk**
1 tsp curry powder (you can substitute dry mustard if you don’t like curry) **I used 1/2 Tbsp. yellow mustard**
a pinch of kosher salt & black pepper
1/4 cup of chicken stock  **I used 1 cup chicken broth**
1/2 cup of grated sharp cheddar (I like white cheddar) **I used an 8 oz. block**

DIRECTIONS

Brush an 8″ x 8″ baking dish with some olive oil.  **My dish was 9×12**
Steam the broccoli and cauliflower florets for 2 minutes until bright and still firm.
Lay the vegetables on the bottom of the casserole.
Place the shredded cooked chicken on top of the veggies.
Whisk together the sauce ingredients, including the grated cheese & curry. Season with salt & pepper. (I really didn’t measure here, but what you are going for is a nice thick, cheesy white sauce, sort of like for macaroni and cheese, so use your best cooking sense!).  **I did add a bit of flour just to thicken mine a little since my milk was thinner than half and half would have been.**
Pour over the chicken and vegetables in the dish and press down with a spatula to absorb the liquid. If it seems dry, then add some more chicken stock to the dish.
Optional (but makes it even better!): Spoon some panko crumbs over the top to cover and drizzle with olive oil. **Instead of drizzling with olive oil, I lightly sprayed the bread crumbs with a canola oil spray before baking.**
You can make this a day ahead and keep covered in the fridge until ready to bake.

Bake uncovered in a 375F oven for about 30 minutes until top is golden brown and casserole is bubbly.
Serve with rice or salad.  **We served with rice pilaf.**

What’s for Dinner Wednesday: Don’s Broccoli Bake

A great twist for a simple veggie.

Broccoli is a vegetable our whole family enjoys. I buy it both fresh and frozen. I use it in my main entrees as well as on the side.

Recently, Don came up with a new way to make it and it was delicious. Everyone devoured it, especially me!

Don’s recipes come from in his head, so I don’t have specific measurements for you or a step-by-step recipe, but I’ll do my best to tell you how he made it.

DON’S BROCCOLI BAKE

Place cooked broccoli in the bottom of an oven-safe baking dish.

Sprinkle with bread crumbs, bacon bits, parmesan cheese, salt and pepper, garlic powder.

Drizzle with melted butter.

Bake for about 20 minutes at 350 degrees.

Top with shredded mozzarella cheese and broil until all the cheese has melted.

How many of these foods do your kids eat?

Recently I came across a list on Babble, which listed 10 Super-Foods Your Kids Should Be Eating Now. I was immediately intrigued. I wondered what the foods were, and whether or not any combination of my kids were eating them. Below is the list and I’ve shared with you how my kids fare. How many of them do your kids eat?

1) Blueberries: All three eat these

2) Sweet Potatoes: Elizabeth likes them

3) Natural Nut Butter (for kids without allergies to nuts): My kids eat chocolate peanut butter but I don’t think that counts. They eat regular peanut butter, but it’s generally Skippy so that’s not all natural either.

4) Avocados: Alex and Liz like them

5) Broccoli: they all like it

6) Yogurt: They all like it, especially if it has crushed up Oreos in it, or is Boston Cream Pie flavored, which I’m not sure is quite what they had in mind here.

7) Tuna and Salmon: They all liked salmon the last time we had it, they all like tuna and spaghetti and Liz likes a regular ole tuna sandwich, even just tuna in a bowl.

8) Eggs: They like em’ hard boiled, fried, scrambled, and Caroline even likes just whites.

9) Beans and Legumes: Here we fall short. Alex and Liz like peas and Liz likes Lima beans, but overall they’re not huge bean eaters other than string beans, which Caroline in particular, loves.

10) Seaweed: Unless it’s wrapped around sushi, which we get to have only once in a blue moon, they don’t really have a whole lot of seaweed opportunities here. Two out of three like sushi though.

So now that you’ve seen the list, how did your family fare? What do you think about the list? As I read it I thought of several other really good for you foods that my kids do eat, so even though we missed a few things on the list, I know there’s other really good things that they eat also and that makes me feel good!
