Quick and Easy Garlic Parmesan Broccoli

“Oh yay! This is my favorite broccoli!”

I kid you not. Those words were spoken at dinnertime tonight when I put this side dish on the dinner table.

This broccoli recipe has in fact, become a new favorite. It might even be neck and neck in line with this one as a favorite broccoli side dish.

We were given this recipe at our local Whole Foods store one Saturday afternoon. Although I don’t do a ton of shopping there, I do have a few things that I need to buy that I can only find there, so one afternoon we were all together and we stopped in to pick up those types of things.

Being a Saturday afternoon around lunchtime, the samples were in full swing. Roaming a store, trying out new things, is one of our family’s favorite things to do. On that day we were given samples of a new favorite granola and of this Garlic Parmesan Broccoli. Although my family tends to really like broccoli, they really LOVED this recipe. As we took our samples, the employee at Whole Foods handed us the paper copy of the recipe. I folded it and put it in my purse and kind of forgot about it. It was late January or early February when we were there, and it was probably the end of February when I remembered I had it and tried it out one night. Sometimes when you make something at home after having had it out, it might not come out the same way. This recipe was seemingly impossible to mess up, and it came out great. I don’t always have fresh broccoli on hand, but I use my Pampered Chef hand-held food chopper to chop frozen broccoli florets after they’re cooked, and it works out great.

And so, tonight when I made it again and I got the exclamation that this is the favorite broccoli recipe, I knew I had to share it with you today. It’s fast and easy and delicious. There’s almost never anything left over, which is always a good sign of a great recipe. I also like that although we got it from Whole Foods, which tends to have a reputation for being very expensive, this particular recipe is very budget-friendly. You can use frozen broccoli, a jar of minced garlic and sprinkle cheese, or you can use fresh broccoli, fresh garlic and fresh grated cheese, depending what your budget looks like and what you happen to have on hand. You can also do any combination of fresh and not fresh also.

Next time you’re looking to spice up a plain side dish like a bowl of steamed broccoli, give this one a try! You never know, you might find that your kids have a favorite broccoli too!

I’ve become addicted to Pinterest.

I’m probably the last person on earth to become addicted because for a long time, even though I knew it was there, I didn’t go on it very often.

I’m on it every day now.

If I’m sitting somewhere waiting, I click on the app on my phone and I just scroll and pin, scroll and pin.

I’ve found many wonderful ideas for many wonderful things, many of which I’ll probably never have the opportunity to try out. But, I’ve pinned them for future reference, just.in.case.

One such pin that I scrolled past actually did come to fruition, and it was a delicious success, so I thought I’d share it with you today for my WFDW post even though it’s not just for dinner.

This recipe for Chickpea and Tomato Salad with Fresh Basil came my way via the Green Lite Bites site, and I appreciate them sharing it because it’s a simple recipe with fresh ingredients, and I will definitely be making it again in the future.

Interestingly enough, on the day I saw this pin on Pinterest, I actually had a can of chick peas sitting on my kitchen counter. I’m not sure who put them there or why, or what the original intention for them was, but they’d been there a while and I’d been thinking of roasting them one afternoon for a snack, since I hadn’t done that in a while.

Additionally, we’d been babysitting my parents’ plants while they were away and one of them was a fresh Basil plant that they’d left us and told us to feel free to use it if we wanted to. So, I had fresh Basil, which I never do, I had chickpeas, which I often don’t, and I had tomatoes, which I always do. I had everything I needed for this recipe.

I also had two cucumbers that needed to be used, so I decided when making this recipe, to add one in as well.

This was going to be on our menu for lunch during the work and school week, so I decided to give my morning a break by making it ahead of time and putting it in the fridge overnight. I also felt that the flavors would have a good amount of time to blend together and everything would be perfectly chilled by morning.

Four out of five of us were having this for our lunches. For two of my daughters, having just this in a bowl was plenty, along with some pita bread cut into triangles on the side. For my husband, we opted to put this salad onto a bed of lettuce, (as I’ve shown here) with the same side of pita bread. There was just enough left for me to have a little bowl on the side with my lunch that day too.

Everyone loved their lunches and it was just enough for everyone’s desired portion sizes. I loved having my morning “off” from making all four lunches from scratch and I loved coming home to my own lunch partially decided for me, and waiting to be eaten. I don’t love lunches to begin with and I hate deciding what to have. This was a nice treat for us all.

The recipe is quick, can be modified to add in or take out ingredients based on your own tastes and what you have on hand. You could throw in some fresh mozzarella cheese balls (although that would make it a little less healthy if you did) and it’d be just as delicious.

CHICKPEA AND TOMATO SALAD WITH FRESH BASIL

  • 1 can chickpeas, drained and rinsed
  • About 1 pint grape tomatoes, halved
  • 25 large basil leaves, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp apple cider vinegar
  • 2 tsp olive oil
  • 1/2 tbsp honey (10g)
  • pinch of salt

Toss all ingredients together and chill for at least 20 minutes, allowing all the flavors to merge.

ORIGINALLY POSTED JANUARY 15, 2014: Recently my friend Melissa shared a recipe that came through Facebook. Although Facebook is a great place to find and share recipes, you can’t always be sure where the recipe truly originated, so it’s hard to credit someone. It seems as this recipe for Creamy Mushroom Orzo may have originated on the page of Sharon Fox, who lists herself as author, food editor, radio personality and personal chef. However, even she says that the recipes found on her page are not from her own cookbooks, but are recipes she’s tried and loved. But, we do the best we can. I always like to give credit where credit is due, if I can.

No matter what, I’m so glad that someone, somewhere, originally made and share this recipe! I really loved it. I used it as a side dish for a kind of “boring” meal that we were having and to me, it made my meal so much more exciting.

The kids did not love it quite as much and I think it’s because it calls for white wine and it really holds the flavor.

I think that’s why I loved it so much!!

The recipe was fast, easy to make, and delicious; all my top qualifiers for a recipe.

CREAMY MUSHROOM ORZO

INGREDIENTS

1 tablespoons olive oil

1/2 chopped onion

3 cloves chopped garlic

2/3 cups orzo

1 cup sliced fresh mushrooms

1/2 tablespoon Worcestershire sauce

1 tablespoon fresh sage

1 tablespoons butter

1 cup low-sodium chicken broth (or water)

3/4 cup white wine

1/4 cup freshly shredded Parmesan cheese

DIRECTIONS
1.In medium sized skillet, heat oil over medium heat. Add chopped onion and garlic.

2.Stir, cooking until onions are golden and soft.

3.Add orzo, mushrooms, Worcestershire sauce, sage, and butter. Cook, stirring about 5-6 minutes until mushrooms are tender.

4.Pour both chicken broth and wine into orzo mixture. Bring broth to a boil. Stirring often cook 10-15 minutes or until orzo is soft and liquid is absorbed.

5.Stir in Parmesan cheese before serving.

Grandma Grello’s Green Bean Marinade

Marinated green beans are great for cookouts and great to bring to a party. This is one of our favorite summer “regulars.”

Grandma Grello’s birthday is this week. There’s a story surrounding her birthday where she was born on one day but it didn’t get recorded for a few days, making the date on her birth certificate different than the date that she was actually born. This makes her birthday date a little sketchy, but we always celebrate it some time this week. In honor of that, I thought I’d share her Green Bean Marinade recipe with you today. Summer is here and we’ve already made this once, one time of many over the upcoming months.

One thing we’ve discovered, is that if you want to, when you’re done marinating the green beans, you can re-use the marinade to marinate broccoli, which is also very good.

Last time I made this, Caroline picked the beans, minced the garlic and pretty much did the entire recipe herself with my supervision, so it’s a good recipe for kids who like to help in the kitchen, as mine do, and I love the idea of passing along family recipes to my kids at a young age, so that when they’re old enough to do their own cooking, they’ll have all their favorite recipes on hand and they will have made them, too.

GRAM GRELLO’S GREEN BEAN MARINADE

Caroline made most of this recipe by herself last time around. Her garlic was so perfectly minced, I thought Grandpa Grello had come back and done it himself, as he was always known for the most perfectly cut ingredients when he cooked.

INGREDIENTS

1 pound clean, snapped fresh green beans, the ends picked

1/3 cup blend of olive oil and vegetable (or canola) oil

1/4 cup white vinegar or cider vinegar (we use white mostly)

salt

pepper

parsley

garlic

Caroline has the marinade ready and awaiting the cooked beans.

DIRECTIONS

Bring salted water to a boil in 2 qt. sauce pan.

Drop in beans.

Bring to a boil and cook for 10-15 minutes uncovered.

Remove with a slotted spoon (apparently this step is the most important. Spoon must be slotted.)

Don’t drain or rinse and place beans into the bowl that has the marinade.

Marinate in the fridge for several hours.

Remove garlic and serve. (We never remove the garlic.)

Wings, roasted potatoes and marinated green beans; a simple summertime meal.

Cauliflower Au Gratin

Cauliflower AuGratin got four thumbs up this week. It was a recipe I found on Pinterest.

I have had Cauliflower Au Gratin before but I have never made it myself. I’ve never even thought of making it until I happened upon it while perusing Pinterest last week. As I’ve said before, I’m always on the lookout for new things to try, new ways to have “the same old thing.” I thought to myself, “Well, they like mac and cheese,” and figured I’d try this. That’s Mom logic for you.

Funny thing is, I was almost right. Overall, everyone except Alex loved it. Alex had peas though, so everyone was happy.

Here’s the recipe, straight from “Point-less Meals,”  the blog that I pinned on Pinterest. I did have to make some adjustments because of what I did or did not have in my house at the time I made it. I’ve noted them.

INGREDIENTS

serves 12 ( 4 points + )

3 pkgs. ( 16 oz each ) frozen cauliflower (I used a head of fresh, could’ve used two or three though.)
1 large onion, chopped (I used half a large onion.)
⅓ c. butter, cubed
⅓ c. flour
½ tsp. salt
¼ tsp. ground mustard
¼ tsp. pepper
2 c. skim milk (I had 1%)
½ c. grated Parmesan cheese

Topping:
½ c. whole wheat soft bread crumbs (I used plain bread crumbs)
2 T. butter, melted
¼ tsp. paprika
DIRECTIONS

Cook cauliflower in a Dutch oven with a little water; drain. (I steamed mine.)

Place cauliflower in the bottom of a 13 x 9 dish coated with cooking spray.

Meanwhile, in a large saucepan, melt butter. Add onions and cook until tender. Stir in flour, mustard, salt and pepper.

Gradually add milk, stirring and cooking until thickened. Remove from heat; add Parmesan cheese. Stir until blended.

Spread cheese mixture over cauliflower.

Mix bread crumbs with butter and paprika. Sprinkle over cheese mixture.

Bake, uncovered, at 350 for 30-35 minutes.
