Has two weeks already gone by?
I can’t believe it’s already time for a two-week menu list for you. The weeks are flying. We have made it through February and March, which tend to be rough, so onward to and through April!

Here are two weeks of menu inspiration for you from our last meal cycle. We did have to make some on-the-spot changes and revisions, but this was our original list:

Sunday: Eggplant Parmesan

Monday: Teriyaki Chicken Wings

Tuesday: Antipasto

Wednesday: BBQ Ribs and Cole Slaw

Thursday: Macaroni and Cheese Casserole

Friday: Taco in a Bag (this was a birthday party dinner)

Saturday: Shaved steak sandwiches with cheese, onions, peppers and mushrooms

Homemade pizza is the best and we like to mix up the varieties from time to time. Here are our ingredients for the Hawaiian and veggie pizzas.

Monday: Grilled Kielbasa

Tuesday: Chicken Marsala

Wednesday: Pork Chops

Thursday: London Broil

What’s for Dinner Wednesday: Two weeks of meals and a tribute to a team player

He’s always outnumbered by the strong-willed women in his life, but he is our biggest fan and we are his, and he is an amazing team player in our family.

Recently, my kids were showing me an online video of a man who surprised his girlfriend by getting down on one knee and proposing to her during a photo shoot. I was misty-eyed watching her reaction and his proposal. I was telling my kids afterwards that when my now-husband and of course, their dad, Don, proposed to me, he asked if he should get down on one knee, but I said no, that instead I wanted him to sit down on the bench next to me in the gazebo where he’d chosen to propose. I wanted us to be equal, at the same level.

Now, more than 20 years and three kids, several dogs, multiple goldfish and one frog later, that equal level, that partnership and teamwork still stands. I don’t think we could make it through a day or a week if it didn’t. As I sit and  write this, it is International Women’s Day and I am reflective and thankful for my chosen partner in life, my best friend and all he does to support me and to support us. He will literally do anything that we four women ask him to do or need him to do, even things that are considered traditionally to be a “woman’s job.” In a day and age when so many are not so privileged as we are to have such support, when women’s rights are being taken away on a daily basis, or have yet to exist at all, I am grateful for my own personal situation, my teammate. I could be married to this guy, or some of the many men in our world just like him, or someone much, much worse.

This week’s menu is brought to you by my husband Don. We usually both sit down together to figure out the family’s schedule and the coordinating menu for the upcoming two weeks, and most often he then goes and does the shopping. He often cooks at least half the dinners. This past week was so busy that we didn’t have a chance to sit together and figure it out, so he created the menu AND did the shopping. I appreciate all he does, very much. Our system would not be successful here if we weren’t both equal partners, and I can’t imagine it being any other way.

It’s Wednesday! We are officially halfway through the first week back to school after our February vacation week, and what a busy week that was! I think I needed a vacation from the vacation. We had visits from family and lots of appointments all week long, and the week flew by. Because we had family in from out of state, our menu was reflective of that, and we ate a few things we don’t always have, special items our guests can’t always get to eat where they live. We also took a ride down to the beach one afternoon, and even though it was too chilly to actually be IN the ocean, it was certainly a beautiful sight to see and reminded me that summer isn’t too far away!

With that thought in mind, here is our two week menu for you with links to the recipes if I have them.

SUNDAY: Chicken with garlic wine sauce and mushrooms. Recipe is here.

MONDAY: President’s Day holiday and the day our first guest arrived. We opted to eat dinner out that night. We ordered in, and everyone got what they wanted at the various restaurants on this particular street. One restaurant, Mosaic, is new to our area and offers Middle Eastern fare, so that was our gift to our guest, and something she doesn’t get to have very often. Those who didn’t want that option ordered in Chinese and Mexican. It was a very culturally diverse dinner table for sure!

TUESDAY: Chourico and peppers. There are many different versions of this Portuguese recipe. My husband’s recipe is made with peppers and tomato sauce. This is great in a sandwich or on the plate. It is something we don’t get to have often so it was a treat for us too!

WEDNESDAY: Hot dogs, chicken burgers, tater tots

THURSDAY: Baked fish with crabmeat and crumb topping, gluten free

FRIDAY: Our second guest arrived. We had a big family dinner of pasta, meatballs and Chicken Parmesan,  with both sides of the family at the table, and we got a special dessert from a local ice cream restaurant, Newport Creamery, which is unique to our area. The dessert was a Jimmy Roll. Jimmies are chocolate sprinkles and the ice cream roll is made out of French Vanilla and Chocolate ice cream.

SATURDAY: Marinated London Broil with red roasted potatoes, coleslaw and broccoli. Marinade recipe is here.

SUNDAY: Lasagna, both gluten free and regular versions were made

MONDAY: Grilled kielbasa with a potato and egg omelet. The omelet used the leftover potatoes from Saturday’s dinner.

TUESDAY: Teriyaki Chicken breasts cooked on the grill with rice and salad using a gluten free sauce

WEDNESDAY: Leftover lasagna

The weeks are flying by! Today I have a two week menu for you, and a new recipe that we recently tried, loved for Loaded Baked Potato Soup, and therefore, just made again. In fact, it is my lunch today, left over from last night’s dinner, as I write. I know that I mentioned last time that I love the Skinnytaste blog, and although I don’t usually share from the same spot so many times in a row, I’m going to have to make an exception in today’s post, which really shares more than one new recipe with you. Thanks to Gina for making such delicious healthy recipes!

Without further ado, here is two weeks of menu inspiration for you.

Sunday (Superbowl): Don’s Chili, Teriyaki Wings, Buffalo Chicken Dip, and Baked Zucchini Rounds with Marinara (her recipe calls for sticks) Here is an alternate recipe for Baked Zucchini Fries from our lunch at the White House that we also love.

Monday: Baked Potato Soup from the Skinnytaste Blog. You can see her recipe here, which also calls for the addition of sour cream as a topping option. We did use turkey bacon on ours.

Tuesday: Hot Dogs and Potato Puffs (Mom’s out on this night, this is NOT my favorite dinner. At least the hot dogs are turkey hot dogs! And there is at least one of my kids who is of the belief that Potato Puffs aka Tater Tots, are a root vegetable. That’s another issue for another day.)

Wednesday: Paninis

Friday: Homemade pizzas (This and Nachos are often our go-to Friday night meals.)

Saturday: Chicken nuggets and mac and cheese (all gluten free) not homemade, tonight is a kids’ night in, parents’ night out for a 7:30 theater show, something we very rarely ever get to do, and we have a final end of season basketball game until 5:30, so desperate times call for desperate measures! This is probably one of their favorite meals when it comes to the not-good-for-you kind of meals, but this is real life. It’s not all good for us all the time. The mac and cheese is a white cheese, organic kind, and the nuggets are better than some we have found, as good as we can get in a frozen, breaded, gluten free tenderloin. And to boot, I have no idea what or where we parents are even are eating, given our time crunch. So there’s that.

Sunday: Baked chicken dinner, a Sunday favorite of ours which uses one of my favorite Pampered Chef  bakeware items.

Monday: Chicken, veggie and rice soup (homemade, gluten free with white rice)

Tuesday: Tacos

Wednesday: Pasta with meatballs

Thursday: Leftovers

Friday: First night of school vacation week, so dinner is currently TBA

Recently, we tried out a new dinner meal and I wanted to share it with you today. It was not difficult to make, and everyone liked it, which doesn’t always happen, and I’m about to put it into the rotation again when we do our next two weeks of meals.

The Skinnytaste blog is one of my go-to sites. I love her recipes, I love that they’re healthy and delicious, they have nutrition facts and  Weight Watchers points attached to them for those who need them, and I get lots and lots of menu ideas from her. I have sworn off getting any new cookbooks because of space constraints, but if I were to break my own promise to myself, her cookbook would be the first one I’d buy.

This recipe came across someone’s radar, I can’t remember whose, but we put it on the list of recipes to try, and one of the reasons that I liked it is that we do well with meals and recipes where people can choose what they like or don’t like, but there is something for everyone at the table. This was one of those meals. We have one person who doesn’t love the steak, but loaded up her lettuce wrap with all the veggies. We have another person who doesn’t love the veggies but ate the steak, and we threw a bowl of cucumbers into the a la carte options because she likes them, and she ate those on the side. Everyone had something to love on their plate, and some of us just loved it all.

For our purposes, we used sandwich steaks for the meal, which are budget-friendly, but you can see Gina’s recipe here, and use the grilled sirloin steaks she recommends as well. It’s hard to believe another whole month has passed! It seems like I was just posting Christmas cookie recipes, but yet here we are in the final stretch of January!

It’s been a couple of weeks, and I have our Two Weeks of Meals for you, but I also have a new crock pot recipe for you that we tried out in the last round of meals. It was new, so I didn’t post the recipe last time, until we tried it. I promised to post it if it was good, and sure enough, it got all thumbs up from all five of us. It’s rare to find one thing that all of us like, especially with a picky eater and another eater who will eat very little meat, and this was beef to boot, so that’s a feat in itself.

The recipe we tried out is called Slow Cooker Mongolian Beef, and you can find it on the Recipe Critic’s site by clicking here. It was quick to prepare, easy because it was cooking while we were gone, and delicious! We used stew meat instead of flank steak and it was delicious.

Happy New Year!

We are already ten days into the new year and looking ahead to Martin Luther King Day now. It doesn’t seem possible that we’re already halfway through January.

That being said, after the new year, it was time for us to get back on track with our weekly meal plans. Through the holiday weeks we were off our schedules completely. When school started up again we had a one week meal plan, so this is our first two week plan.

With a new plan comes the usual “all-call” to the kids, asking if anyone has anything they’re craving or wanting over the next couple of weeks. We had one kid down for the count with a virus, so she did not weigh in this time around. However, the other two both sent me recipes they wished to try this time. I was happy to see some new recipes on the list, and I am happy to report that of the two we’ve tried already, they were both well received and something we would make again.

We made our list of meals and did our grocery shopping, and I wrote out the recipes for the two new meals and stuck them on my kitchen cabinet. Both were recipes the kids had seen online and one was a video. I will link to them in the list below. There are other ones we are trying out that I will feature in a future post if they are voted into the rotation.

Here is our current list of meals.

meals-2Sunday: Italian Antipasto (a huge salad of sorts containing various meats and cheeses, tuna and hard-boiled eggs)

Monday: Two soups: Normally I don’t make more than one meal, but I made an exception here. We had planned our typical Chicken Escarole Soup with gluten free pasta, but Liz wanted to try out a new soup. I knew some of us would like it and some wouldn’t, but I didn’t want to eliminate it just because not everyone would eat it. I had a sick kid that could use the chicken soup, so I opted to make both. One was a crockpot soup, and I’d totally make it again. You can find the recipe for it here. A photo is shown above as well.

Tuesday: Mongolian Beef (this is a new recipe we have not tried yet).

Wednesday: Spaghetti with Tuna Sauce (see recipe here)

Thursday: Zucchini Shrimp Scampi: This was a great new recipe submitted by Caroline and again, everyone loved it. We got to use a new grating tool for the zucchini that made long spaghetti-like noodles. You can see this recipe here. A photo is shown below as well. We did add tomatoes to ours, and for a family of our size we would use six zucchini next time, instead of four. It was that good, with very little left over.

Sunday: Red Wine Crockpot Roast: We tried this recipe a few menu cycles ago, and absolutely loved it. Everyone loved it, which is often rare. We are adding it back in this time around.

Monday: MLK Day: Roasted Chicken Dinner

Tuesday: Paninis

Wednesday: Chicken/Broccoli/Pasta Saute (we usually make Wednesday a pasta night at this time of year because all three kids have a Wednesday night commitment and it allows us to cook early, eat early and eat quickly before we go our separate ways.

Thursday: Breakfast for dinner: Pancakes (another busy night meal we often rely on)

Friday: TBA

Happy Wednesday everyone!

There is a crisp feeling in the air these days and just the other night, I did it: I turned on the heat in the house.

With the change in season comes some meals on our bi-weekly menu that we don’t make really any other time of the year. We all get excited when we see the reappearance of those menu items.

Without further ado, here is our list for the current two weeks of meals. I hope that you’ll find something on this list that inspires you too!

TWO WEEKS OF MEALS

Monday: Whole chicken (this was a carryover from last time, we never got to have it during that two week cycle.)

Tuesday: National Taco Day, so……tacos

Wednesday: Pasta de Peche (this is an old Italian egg drop soup kind of pasta recipe. It reminds me of my childhood but it’s actually a recipe my daughter brought home from her friend’s house and it is her grandmother’s recipe. It is so simple, so here it is as we make it for a family of four, and then we make smaller version for one gluten free:

PASTENA OR PECE de PEPE:
16 oz. box of pasta, 4 scrambled eggs, 4 cubes of chicken bouillon, drizzle of olive oil

Boil the pasta as usual. When it is done, drain the water but do not take the pasta out of the pan. Leave a small amount of water in the bottom. Shut the heat off and add in beaten egg with a little olive oil. Stir into pasta. Add in (Herbox) bouillon. Stir until egg has cooked. Add a butter, salt and pepper to taste.    (For the gluten free version the box of pasta is 8.8 oz, so we use 2 eggs and 2 bouillon cubes.)

How I enjoy the little breaks that I get in September.

The start of school comes barreling in for weeks before that actual first day. They are filled with doctor appointments of all kinds-eyes, teeth, and school physicals, along with coaches’ practices for school sports teams, and whatever else we manage to squeeze in. We shop for clothes, shoes, notebooks and pencils. Those last two weeks of summer vacation fly by and then suddenly, the front door opens and closes a few times one morning, and by 7:30 am, everyone is gone. The house is incredibly silent. So much so that I sit and revel in the silence for a little while, sad, but yet relieved. We did it. We made it to the first day of school.

Whew….

Because I am primarily a school news reporter, this early part of September is my down time, and I enjoy it very much. I still work, but the intensity of my job is lower at the start of the year and it gives me a few weeks to ease into the school routines before it really picks up and we fly into the fall and holiday season of writing, school and family commitments.

This is the time of year I can start to try out some recipes that I’ve been putting aside, sharing on Facebook so I don’t forget where to find them, looking through cookbooks and this is the time of year I have the most time to share them on The Whole Bag of Chips. I even have the time to look up and link up the recipes for any of the meals I’ve shared previously.

Since last year I hardly had any time at all, and since it’s September now, I am giving you a nice, full post today. It’s got our Two Weeks of Meals menu for this week and next, a new recipe we tried out last week and surprise….a safety warning to go along with it!

Our menu planning is challenging for us because we are trying to combine meals that work for our busy schedule with providing healthy eating options for our family and making it either a gluten free meal or providing almost the exact same option in a gluten free version, every night. Not to mention, we try not to make things we know people don’t like.

Challenging.

But doable.

So this recipe for the Skinnytaste Zucchini Lasagna is one that I saw on Facebook, and I shared it out so that I wouldn’t forget where it was. We really wanted to try it, so we added it to the last two-week menu cycle of meals. It was delicious. A little labor-intensive, so we scheduled it on a night we’d be eating later, with more time to cook. I’d be working that night and my husband would be able to come in a little earlier in the evening to help make it, and to help with all the nighttime pick-ups for the kids.

This was a delicious meal, any leftovers disappeared within days, and we'd definitely make it again, just a little more carefully next time.

And so, here is the final part of my post for you: the safety warning.

The warning goes like this:

If you are using a sharp kitchen tool, be sure that you are using all of the necessary parts and pieces that go with it. They are there for a reason! Zucchini is a slippery veggie and kitchen tools are very sharp. If you are not careful, you may end up heading out to the emergency room instead of heading to the dinner table!

It’s September already! The summer flew by. It seems that each one seems to go faster and faster, and seems to end sooner and sooner! This summer was a good one though, good weather, good times, an overall good break from the stress of the school year.

With the start of each new school year, I try to be reflective on the past year and see if there is any way I can make my life and all of our lives, easier, flow more smoothly, have more balance, and be less chaotic. We spent the last couple of years really streamlining our meal planning and shopping patterns and we have found it to make a huge impact on our stress in that area. We always know what we’re eating for two weeks in a row, and we’re always stocked up on everything we need for those meals. We plan them to be healthy, budget friendly and most importantly, they coincide with nights that are busy when we have quick and easy meals and nights that we have more time to enjoy a meal with more prep time. It also allows us to coordinate our calendars and keep to the rule of always eating dinner together, as often as we possibly can, which ends up being most nights. Everyone has their thing, and the family dinner is one of our big things.

So now that we had that system down pat, I could look to other areas of our life to see what I could do in preparation for this upcoming school year because once it starts, it’s full speed ahead through June. No time to implement changes and upset the apple cart midyear.

Over the summer, our kids had a friend sleep over, and in the morning after they woke up, I invited her to stay a bit longer and accompany us on an errand, after which we’d drop her off at home, rather than her parents running out to pick her up. She grabbed her phone, opened up an app, took a look, and said, “Let me check my Cozi calendar. Yup, that should work, we don’t have any plans, let me call my mom and ask if it’s okay.”

I had a lightbulb moment right then. I suddenly remembered that years ago, before the days of smartphones and apps, I actually used Cozi briefly, housing it on my laptop computer. It had been recommended to me by my brother as an organizational tool, and although I tried it and liked it, not having a portable application for it, left all my organization at home and me on the road most of the week. Also at that time, none of our kids had smartphones, nor did we. So no one else could really utilize the app and after a while, I stopped using it and went back to carrying a paper planner; an 8 1/2 x 11 bound calendar book with long columns for each day, broken up by the hour. I was the keeper of the calendar. Anyone who needed anything had to ask me first or if they were home while I was home, go look it up in the book. That system seemed to work as best it could, for years.

After that lightbulb moment, believe it or not, I totally forgot about the Cozi app again. My memory isn’t what it used to be. We left that day for our errands, and my lightbulb went off. However, just a morning or two later, I was on a social media page and there in front of my eyes, popped up an ad for Cozi! It was like they knew I’d seen it in person just days before. (That’s a scary thought, but that is what it seemed like.) Right then and there, since I had some time, I opted to download the app onto my smartphone and start setting it up. Now that all our kids are out of elementary school, we finally have five phones so everyone could set up the app and access it from their phones.

As I set us up, I was able to give everyone a colored dot, even the dog, since she has semi-monthly groomer appointments and regularly scheduled veterinary appointments. I could make items repeat weekly, monthly or bi-weekly, and set up reminders for my family members days or hours before an appointment so they don’t forget that we have it. I could also make grocery lists for every store we go to, and to do lists for myself, a shared list, and individual lists, as well as lists for upcoming events. I started seeing many less post-it notes all over my desk and dining room table (which serves as my other, bigger desk). I noticed that if I had a few extra minutes to run into a store, I had the list right with me and didn’t have to search my failing memory for what it was I thought we needed.

My favorite thing though, is that all of our immediate family members have access to the calendar and to the lists. No one has to ask me if we have something scheduled on such and such a day or where someone is on any given night of the week. They can look at the calendar before asking permission to go somewhere. The kids actually start their sentences with, “I looked on Cozi, and the date is clear, can I schedule…..” which takes a lot of pressure off of me having to constantly manage everything for everyone. If someone runs out of something, they can add it to the list, and if they pick it up at the store on the way home, they can cross it off. It’s been great so far, and I think it’s going to really help us streamline our organization. We even added our two weeks of meals list to the list options so at any time anyone can see what’s for dinner tonight, if we need anything from the store for it, we can switch meals around on the fly if we need to because we have the whole list in front of us as well as the calendar, and I don’t have to answer that “What’s for dinner tonight,” question four times between 4pm and 6pm each day.

I often struggle with the ever-presence of technology in our lives, and I work very hard to try to keep balance in our family with phones, laptops and the like, as hard as it is. It’s not a perfect situation, but we’re always trying hard to keep at it. However, in this situation, I like the positive aspect of technology. I hope that throughout the year I continue to see the benefits of Cozi and that it will continue to eliminate some of the stress in our lives.
