Ever have one of those nights where you’ve counted on leftovers for dinner but yet when you open the fridge, there aren’t any?

Yup. It really stinks when that happens, doesn’t it?

We must’ve had a very hungry week the week prior to our spring break because when we made our menu for the week, knowing we’d be going away for the break week, we tried hard to use what we had and we worked in leftovers on the menu for a particularly busy night where we’d have to eat and run. But, we did an extra good job of using what we had because when I looked, I realized I needed a new plan for dinner that night.

Coincidentally, because I get so many meal ideas and recipes in my inbox each day, one happened to catch my eye and spark my interest for dinner that night. It was an egg and sausage casserole which was supposed to be cooked in the slow cooker, most likely for an Easter brunch type of meal, but it gave me an idea for my last minute Wednesday-before-the-chorus- concert-and-dance-class night type of meal instead.

I began looking on the internet and Pinterest for egg casserole ideas. I wanted to make a good-sized one so that I could also use it for the remaining week’s breakfasts and lunches too. I am a big fan of the “Cook Once, Eat Twice” philosophy.

The recipe I came up with was well-received by my family and I even served it with an English Muffin bread, which I made in the bread maker while I was gone for the afternoon. I did not need to slow cook my casserole, so I baked it in the oven instead. It was a perfect meal.

Here is the recipe I somewhat created, based on all the recipes I saw that day.

EGG AND SAUSAGE CASSEROLE

INGREDIENTS

Olive oil

12 package cooked sausage (I used a combination of cut up low fat turkey sausage links (8) and what I had left of my Jimmy Dean low fat Turkey sausage crumbles.)

14 eggs beaten

1/2 cup milk

1 small onion, chopped

Several small potatoes, chopped into bite sized pieces (I used six potatoes, I could’ve done with five. Six was just a bit much, even for a large casserole.)

1-2 cups shredded cheddar cheese (we use low fat)

DIRECTIONS

I precooked my potatoes and my onions and sausage in olive oil on the stove top first. I put them into two cast iron skillets since I had such a large amount, and cooked them before putting them in the bottom of my casserole dish. I poured my eggs on top of them once in the dish, and topped with the shredded cheese.

I baked my casserole for one hour at 350 degrees. Be sure to check it by putting a knife through. The casserole looks done about halfway before it is done. Halfway through, I covered it with foil because the top was golden brown but the inside was still loose.

Every so often I come across a recipe that reminds me of my childhood because it’s a recipe from my mom and I grew up eating it. Today’s recipe is one of those. I came across it when I was looking for a different recipe. It’s another one that although I grew up eating it, my kids had never had it, meaning it’s been “that long” since I’ve made it.

I like this recipe because it’s adaptable. You can fill the center of the pancake as is, or you can add in or take out ingredients or change them all together to suit your needs. We were out of mushrooms this time around so we didn’t use them even though the recipe calls for them. There are lots of combinations that would be great in the center of this pancake and it’s great for a variety of taste buds!

This recipe is a little long, but I encourage you to give it a try anyway. It’s a fun recipe to watch bake in the oven because it puffs up quite a bit and it’s neat to show the kids the difference before and after. We had it for dinner, but it’d also be great for a brunch or even for a breakfast dish.

HAM AND SPINACH PUFF PANCAKE
INGREDIENTS
PANCAKE:
1/4 cup butter (I used I Can’t Believe It’s Not Butter)

2/3 cup flour

3/4 cup milk (I used Skim)

2 eggs

1/2 tsp. salt

FILLING:

3 tsp. butter

2 cups (8 oz) sliced fresh mushrooms (this time around I didn’t have any so they’re not pictured)

1/2 lb. cooked and cubed to 1/2″ ham

10 oz. package chopped, frozen spinach thawed and well drained

1 1/2 cups (6 oz) shredded cheddar cheese ( I used very little cheese due to our dietary restrictions, and this time I used reduced fat provolone cheese.)

DIRECTIONS

Heat oven to 400 degrees.

In a 9″ glass pie plate melt 1/4 cup of butter in oven  (2-4 minutes).

In large bowl combine milk, flour, eggs and salt.

Using wire whisk or rotary beater, beat until smooth (2-3 minutes).

Pour batter onto pie plate. Bake 20-25 minutes or until golden brown.

Meanwhile, in 10″ skillet, melt 3 tsp. butter. Stir in mushrooms, cook over medium heat, stirring occasionally until mushrooms are soft (5-7 minutes).

Stir in ham and spinach. Continue cooking until heated (3-4 minutes).

Stir in one cup of cheese.

Spoon filling into center of hot pancake.

Sprinkle with 1/2 cup of cheese. Heat until melted and serve.

I’m a football widow.

Not all the time, not all season long, which is FOREVER long, but towards the end, during the playoffs and the Superbowl itself.

I can’t fault my husband in any way. He loves the sport, but even so, he’ll record a game and watch it later on so that he’s available for our family’s needs.

So, during playoffs and the Superbowl itself, it’s only fair that he be able to hang out with his friends and watch the game.

That leaves the girls and I with a few meals that are just for us, and sometimes I try to do something fun. Sometimes I’m just totally out of ideas.

Today’s meal is one of the totally out of ideas meals. It was a Sunday night playoff game and I had no idea what to cook when I got home that night with the kids. We’d been running errands, it was evening, it was winter, it was dark, and it was really any other excuse I can come up with not to want to make dinner.

But, then I remembered that a friend had sent me a fun looking recipe to try, some pancake cups, which she thought looked right about my style. She was right! Except they were breakfast, not dinner. But really, does it matter? Nope! Not in my house it doesn’t.

So on that night (the cold, winter, dark night where I didn’t want to make dinner) I made breakfast instead, trying out these cute little pancake cups, which I have fondly renamed Upside Down Pancakes, because they are made in muffin tins, and when I cooked them there was a better well for my fruit compote when I turned them upside down than there was when I left them right-side up.

And so, with a recipe from “Racing and Saving Mama,” sent to me by my friend Gina, here are the Upside Down Pancakes for your next brunch, or dinner! I have put any modifications I may have made, in parentheses.

UPSIDE DOWN PANCAKES
INGREDIENTS
1 cup milk (we use skim)

6 eggs

1 cup flour

1/2 tsp. salt

1 tsp vanilla

1 tsp orange zest -optional- (I didn’t use it)

1/4 cup butter (I use I Can’t Believe It’s Not Butter) melted

(I also added in some Jimmy Dean Turkey Sausage Crumbles to half of my tins.)

The directions state to serve the pancakes with your favorite toppings so I created an apple-cranberry compote and served with whipped cream. YUM!

DIRECTIONS
Preheat oven to 400 degrees.

Blend first six ingredients in a blender. (I used a hand blender to blend them.)

Be careful to see that any flour clumps are well-blended.

Blend in butter a little at a time in order to temper the eggs.

Grease muffin tins well and distribute the batter evenly between the 24 tins (I got 12 but I think my tins are larger than hers.)

The author of the recipe recommends using 1/4 cup of batter in each tin.

Bake for 15 minutes until puffy and golden on top.

Sometimes, it just all comes together.

One recent weekend, I tried a new muffin recipe for Honey Muffins from One Perfect Bite. They were so easy, but most of all, they were a perfect complement to two other recipes that we love.

That morning, our breakfast was just amazing.

On the menu were:

The greatest thing was that the jam was made ahead of time, and I actually made the eggs up the night before and reheated them in the morning, which I do a lot during the work week.

On this particular morning, we were heading out for the day and this breakfast filled our bellies before we went.

Here’s the recipe for the honey muffins. I did use part wheat flour and part white flour so technically they were a Honey Wheat Muffin instead of just Honey Muffins, but the recipe is otherwise the same as what One Perfect Bite posted on her blog.

Ingredients:
2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/4 cup butter, melted
1/4 cup honey

Directions
1) Preheat oven to 400 degrees F. Grease or line standard muffin cups with paper liners.
2) Combine flour, sugar, baking powder and salt in a large bowl.
3) Combine egg, milk, butter and honey in a small bowl.
4) Stir wet ingredients into dry ingredients just until moistened.
5) Fill prepared muffin cups three-fourths full with batter. Bake for 15-18 minutes or until a toothpick inserted near center comes out clean. Remove from pan to a wire rack. Serve warm. Yield: 1 dozen.

If you’re a regular reader of The Whole Bag of Chips, you know I love muffins. I also love after school snacks.

Many times my snacks are muffins and if there’s enough leftover they are breakfast the next day too.

I can tell you…today’s recipe: none leftover.

These were so good.

I have tons of muffin recipes but I still love trying new ones. On this particular day I was looking to try a new recipe for banana muffins. When I saw one by Betty Crocker that incorporated bananas and cinnamon and sugar; well that had my name all over it.

These were so great, the kids all loved them.

I only made a minor modification: Instead of melting the butter at the end and dipping the muffins into it and then into cinnamon-sugar, I opted to just sprinkle some cinnamon-sugar on the tops prior to baking them.

Normally I also substitute plain nonfat yogurt instead of oil, but on this day I actually forgot and I used canola oil. It wasn’t until I dumped it in, that I realized I’d forgotten. So that’d be another substitute you might want to make if you’re trying to healthify the recipe a little bit more.

BANANA CINNAMON MUFFINS by Betty Crocker

INGREDIENTS

MUFFINS

2/3 cup sugar

1/2 cup vegetable oil
2 eggs
2/3 cup mashed very ripe bananas (2 small)
1 teaspoon vanilla
1 2/3 cups Gold Medal® all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
TOPPING
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup butter or margarine, melted
DIRECTIONS
  • Heat oven to 375°F. Grease bottoms only of 12 regular-size muffin cups with shortening or spray, or line with paper baking cups.
  •  In medium bowl, beat 2/3 cup sugar, the oil and eggs with wire whisk. Stir in bananas and vanilla. Stir in remaining muffin ingredients just until moistened. Divide batter evenly among muffin cups.
  •  Bake 17 to 21 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan to cooling rack.
  •  In small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon. Dip muffin tops into melted butter, then into cinnamon-sugar. Serve warm.

As a reporter and writer, I have a wacky work schedule, I’ll be the first to admit it.

Flexible, but wacky.

It’s different every single day, night and weekend, and I’m often working when a lot of people are off, but at the same time I also have a lot of flexibility to plan around the needs of my family, and that allows me to keep my focus of “family first” a top priority.

This week, after what seemed to be a crazier block of work days and nights than usual, I finally had a day off. I had a whole Wednesday day and night, where I didn’t have to work at all. I had nothing to cover, nothing to type for the newspaper, no place to be while my children were at school. Although my afternoon and evening would be busy bringing the kids to their Wednesday activities, my day was free.

Wide open.

You might think to yourself, “Oh…shopping, lunch, manis and pedis!!”  But no, I didn’t go that route. Instead, I decided that I’d use that day to the best of my ability, to cook ahead as much as I could, in order to be better prepared for the coming days when things were back to normal.

I’m so glad I did.

I got so much accomplished.

In one day, I cooked two banana breads, three batches of strawberry jam, 16 crustless baby quiches, six peanut butter and Nutella sandwiches to freeze ahead for lunches, and a dinner for that evening that was NOT cooked in the crock pot, of Shepherd’s Pie, which I made into seven individual pie tins just for the fun of it.

I rocked it.

I ate one of the sandwiches before it went into the freezer, but it’s okay. I earned it.

When my kids were eating their breakfast the next morning, enjoying their jam, Elizabeth said to me, “Mom you definitely have to share this recipe on your blog, it’s so good!”

And so I will share it with you today.

I can’t lie though: A big part of the secret to my success on Wednesday involved the crock pot…again!

However, I used something different: our triple crock pot that we normally use for big gatherings–holidays, birthday parties, and big events like that. An anniversary gift from my mother-in-law years back, I never thought to use it “just” to cook in.

I don’t think I even realized that you could cook in it, since we’d always used it as a warmer to keep the food we’d pre-cooked for the parties, warm.

When a friend passed along two recipes to me, one for banana bread in the crock pot and one for strawberry jam in the crock pot, I decided to give it a try, and do it all at once in the triple crock. This would allow me to use my oven and stove top for other things at the same time so that I could get more than one thing going at a time.

I must say, I loved that option! I also have to say my house smelled AMAZING the entire day. I was hungry all day long!!

The recipes were both super-easy and super-fast to prep. My triple crock has two small wells on the sides and a larger well in the middle. For that reason, I opted to make two smaller breads using the sides and do the strawberries in the middle. I could’ve gone either way I suppose. I could also, in the future, make a double batch of breads: one larger one in the middle and two small ones on the sides.

Lots of options.

And, now that my bread and jam in the crock pot experiment was successful, I know that I could do this as an after school snack in the future, baking all day long while I’m gone, making the house smell warm and welcoming when we return.

This summer, one thing I wanted to do was try out some of the recipes I’d pinned on Pinterest. Today’s recipe post is one of those. I figured that if it was good, I’d post it for one of my fall/pumpkin themed posts.

Which I am, today.

But I don’t know what it is.

A muffin maybe.

Or a cupcake possibly.

Pumpkin, for sure.

I’ve seen this recipe all over the internet and Pinterest, and it’s touted as being fast, easy, tasty and a good Weight Watchers snack even.

Two ingredients for today’s muffins. Cupcakes. Whatever they are.

This recipe has two ingredients:

Cake Mix
15 ounces of pumpkin

Mix, bake at 350 for 20-25 minutes.
Try them and let me know what you think! Are they a cupcake or a muffin? Are they truly healthy? No eggs, no oil or butter.

Do you sprinkle them with powdered sugar like a muffin or do you put frosting on them like a cupcake?

A delicious weekend breakfast: Baked Eggs

This past Saturday I was in the mood for something different for breakfast. I wasn’t sure what, but I knew I didn’t want the same old thing.

While I was pondering what I was in the mood for, I remembered that when my kids slept over my parents’ house last, they had mentioned a new baked egg breakfast they’d tried. My mom found it in “Dash” magazine, and it had ham in the muffin cups with the eggs cracked inside, and parmesan cheese sprinkled on top. The kids had loved it and I’d been meaning to try it here ever since.

At the same time, I also remembered that Alex’s new “High Five” magazine had come in the mail this week, and that coincidentally, the recipe had been one for baked eggs as well. It was slightly different in that it didn’t call for ham on the bottom but instead had diced tomatoes and shredded cheese.

So, I decided to combine the two recipes. The bake time and temperature was the same for both recipes. The only difference was the ingredients and we liked everything the two recipes called for.

They.Were.Amazing.

Fabulous.

Delicious.

We loved them.

I highly recommend you try these out the next time you are craving something different for your breakfast. They’d even be great for a brunch.

Here’s what I did:

1) Spray each muffin well with nonstick spray.

2) Place a slice of ham in the bottom of each muffin well. I actually used deli ham that was sliced in half. One half into each spot.

3) Place about a teaspoon or so of diced tomatoes on top of the ham. (One large vine ripened tomato was enough for all 12 portions.)

4) Sprinkle some shredded cheddar cheese over the tomatoes. (I used nonfat cheddar.)

5) Break one egg into each spot.

6) Sprinkle a little bit of salt and pepper on each.

7) Bake at 350 degrees for 18-20 minutes or until the yolks are as firm as you desire and the whites are cooked through.

Serve with toast or an English Muffin if you’d like.

A while back I posted about Elizabeth’s cookbook and I posted one of the recipes we’d tried at the time, a tuna salad recipe. Since then we’ve had it for lunch and even for dinner!

Today, I thought I’d post another recipe from that same cookbook, one that we have had for lunch and for dinner this summer, and one that we’ve also modified slightly to meet everyone’s different taste buds. It’s a great summer meal because it is cool, doesn’t involve using an oven, and uses a great summer fruit: fresh strawberries.

The ingredients for this are simple, no matter which way you choose to make it. You need:

Fresh sliced strawberries

an English Muffin

Strawberry jam

Goat cheese, cream cheese, or peanut butter

The directions are even more simple!

“Split an English Muffin and lightly toast the halves. Spread the cut side of the bottom half with softened goat cheese or plain whipped cream cheese (we also have done peanut butter). Top with a thin layer of strawberry jam, followed by a layer of thin strawberry slices. Cover with the top half of the muffin, jam side down, and press gently.”

We prefer to do open-faced sandwiches, in order to have more fresh strawberries! This sandwich has been a hit every time we’ve served it, and it’s easily modified for everyone.

I love it when I find new recipes to try out. I follow so many foodie pages on Facebook that I’m always getting great ideas for new things to try.

A few weeks back, I came across a post from The New Modern Mama blog where she talked about trying some new muffins at her house. They sounded good to me and I had everything for them so the next day I tried them at my house. They were great!

I made them for an after school snack and then there were leftovers for the next morning as well. I made a few changes:

*I used nonfat vanilla yogurt, not greek yogurt.

*I used Truvia rather than Stevia and followed the measurement guidelines on the Truvia package.

*I had both “quick” Steel Cut Oats and the regular kind. The quick kind are softer and I thought they’d blend easier, so I used those.

*Although I used my blender, if I made them again, which I hope to, I’d use a food processor. My blender had a hard time.

They were good, they were something new and different and everyone loved them. This recipe is a keeper for us, for sure. I hope you’ll try it too! I know that you can try other fruits in the recipe besides blueberries, so next time I just might do that!

Blueberry Banana No Flour Muffins
From The New Modern Mama

Ingredients:

  • 2 overly ripe bananas
  • 2 eggs
  • 2 1/2 cups steel cut oats
  • 1 single serving cup, low fat, greek yogurt {I used vanilla}
  • 1 cup of blueberries
  • 3/4 cups of sugar or stevia
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda

Method:

  1. Preheat the oven to 400 degrees.
  2. Put all of the above ingredients into a blender except for the fruit.
  3. Blend ingredients until smooth {you may have to scrape down the sides and do this several times}.
  4. Pour blended ingredients into a bowl and stir in blueberries.
  5. Pour muffin mix into greased tin.
  6. Bake for 20 minutes.

This made exactly 12 muffins.
