Knorr sauce mix: sometimes you just need quick and easy

I was going to put the salad right on the plate, but I just couldn't. I'm definitely an "on the side" girl!

Not everything has to be from scratch, not everything has to be a full course meal every time.

Yup, that’s what I try to tell myself on a regular basis.

Don’t get me wrong, we have mac and cheese with hot dogs at our house too.

Sometimes.

On occasion.

Next time we do, I’ll take a photo and post it.

Shortcuts are good!

I actually LOVE mac and cheese and hot dogs, and it has to be the kind of mac and cheese out of a box.

With the powdered cheese sauce.

But, I digress.

With busy schedules that are never the same and with holidays and birthdays mixed in there, sometimes I just need something quick and easy to make for dinner.

Last week’s dinner was one of those nights. I had to leave right after dinner for Girl Scouts and while I was cooking dinner I was helping whoever needed it, with homework too. This ended up also being the night that my daughter accidentally fell on the stairs while trying to jump up and touch the door jamb, hitting her head instead and knocking herself out, with a slice of pepperoni in her mouth.

It was a crazy night.

But again, I digress.

My cousin had given me a package of Knorr Garlic and Herb sauce that she’d tried, when I was at her house last. She’d had it over veggies (cauliflower, broccoli, carrots) and she thought I’d like it.

I was going to make it over a veggie to go with our meal last week, tortellini, when I realized that on the front of the package itself it showed the sauce over tortellini, so I decided to try that. I chose asparagus for my veggie and had a fast and easy, complete, relatively healthy meal in a matter of a few minutes.

My kids all liked it, so I’d make it again for sure.

So today’s post isn’t a recipe exactly, it’s more a product review I guess, or a meal suggestion. The recipe for the sauce is contained on the back side of the packet of sauce. Give it a try and see what you think.

The Un-birthday-cake Birthday Cake

Although I'm crafty, I'm not an artist so birthday cake decorating is not really my thing. But, each time, my kids always say they love my cakes and that means so much to me.

Every once in a while I have one of those slap-myself-on-the forehead realizations, the kind where I think to myself, “Why didn’t I think of that,” or even “Why didn’t I think of that sooner?”

Birthday party cakes was one of those moments.

Although I don’t bake them from scratch, I always make our cakes at home and do my best to decorate them despite my lack of artistic ability, but the funny thing is none of us in our immediate family actually really like the traditional birthday cake kind of cake, you know the yellow or chocolate cake with the birthday cake frosting on it. Yet, I just kept making them three times a year, six times if you count friend parties AND family parties. Sometimes I’d do cupcakes instead, but still it’s like cake.

And then last year it happened: my sister in law and her family were here for Elizabeth’s birthday and I made some kind of comment about making the cake even though none of us actually eat it.

Her brilliant answer: “You know, I’ve done brownie cakes and chocolate chip cookie cakes instead, and frost them just the same. It works out great.”

We love brownies! And, we love cookies!

Elizabeth's "cake" this summer was our first brownie birthday cake.

So last summer I tried out a frosted brownie cake for Liz’s party and it worked out great! I did it two more times over the summer, once for her friend party and once for July 4th, and then again in October for Caroline’s party. Over and over I just kept thinking to myself, “I can’t believe I never thought of this!”

Here it is again, birthday party time and once again, we are doing the un-birthday cake birthday cake. I briefly toyed with the idea of trying out a cookie cake this time and I even grabbed the recipe from my friend Shelley, but I just didn’t have the time to pull it off this weekend. Next time….

In any event, a great time was had by all, and everyone loved the “cake.”

Surprise, it's a brownie! And, this was a budget-friendly brownie cake with the brownie mix from Price Rite and the frosting from Aldi's. My secret ingredient: I throw chocolate chips into the batter.

New recipe, new product review

The Weelicious oatmeal recipe for the crock pot is one of our favorites.

Back in January I posted the recipe for the Weelicious Overnight Crock Pot Oatmeal and said how much my family enjoys it. One of my gripes about it though, is that as delicious as it is, it makes a thick “skin” on the inside of the crock pot, which takes forever to clean. Normally I have to soak and scrub, soak and scrub.

I found the idea of the slow cooker liners intriguing.

Therefore, I was intrigued when I saw a coupon for Reynold’s Slow Cooker Liners back in early March. I decided that since I had the coupon and since I use my crock pot kind of a lot, they’d be worth trying out and I could decide at that point if they were worth buying again. The cost at Shaw’s was $3.99 for four liners and I had $1.00 off.

Around the same time, I discovered a new Overnight Slow Cooker Apple-Cinnamon Steel Cut Oatmeal on Pinterest, which was originally from Monica at The Yummy Life blog. I decided to try the recipe and the liners at the same time.

The recipe was indeed “yummy” as the title of her blog implies! It was very similar to the Weelicious one but it had brown sugar and butter that were extras. I always add apples to my Weelicious recipe, but they were in this new one too. I also noticed she had two other overnight oatmeal recipes on there. I might check them out in the future too.

As for the liner, it was okay. I opened the box and found the instructions, which say:

1) Open the slow cooker liner and place it inside the slow cooker bowl. Fit the liner snugly against the bottom and sides of the bowl; pull top of liner over rim of bowl.

2) place ingredients in lined slow cooker first, then turn on slow cooker. Place lid on slow cooker. Cook according to recipe.

3) Carefully remove lid to allow steam to escape. Serve meal directly from lined slow cooker.

4) Cool slow cooker completely; remove liner and toss.

The illustrations show a sparkling clean slow cooker at the end.

I followed the directions and had no problems using the liner. It fit inside my slow cooker easily and the cover went on without a problem.

All ingredients ready to go.

In the morning we ate our oatmeal as usual and I followed the directions, serving it right out of the container. I was worried that the plastic might tear when I was scraping the spoon against the sides to serve it, but it didn’t rip.

I let the crock pot cool completely before pulling out the liner. I was surprised to find that the crock pot wasn’t as clean as I’d expected it to be, based on the illustrations in the directions from the box. However, it also wasn’t anywhere near as bad as it would be without the liner and it was much easier to clean.

Overall, the jury is still out as to whether or not I’d buy these again. I think it will depend on how the liners do with our other recipes. I do think the cleanup was much easier though, so we’ll see how it does with something like “gravy” or BBQ Beef. Those can be super-messy and that might be the true test for me.

Here is Monica’s recipe for the oatmeal. I also like that she included the Weight Watcher’s Points at the bottom.

The magic of the crock pot: it cooks while you sleep. I love coming out in the morning and having breakfast already done, especially on a school day.

INGREDIENTS

  • 2 apples, peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped)
  • 1-1/2 cups fat-free milk (I had 1%)
  • 1-1/2 cups water
  • 1 cup uncooked steel-cut oats
  • 2 tablespoons brown sugar
  • 1-1/2 tablespoons butter, cut into 5-6 pieces (optional)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon ground flax seed (I don’t have flax seed so I skipped this one.)
  • 1/4 teaspoon salt
  • Optional garnishes: chopped nuts, raisins, maple syrup, additional milk or butter

DIRECTIONS

Coat inside of 3-1/2 quart (or larger) slow cooker with cooking spray (I used the liner instead). Add all ingredients (except optional toppings) to slow cooker. Stir, cover, and cook on low for 7 hours. Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in refrigerator. Freezes well.

To reheat single servings: Put 1-cup cooked oatmeal in microwave proof bowl. Add 1/3 cup fat-free milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot.

Recipe can be doubled in 6-quart or larger slow cooker. Increase cooking time 1 hour. I doubled mine and cooked it from 10 pm to 8 am.

Couponing Update: a one paycheck snapshot

After my last couponing update, my one month check-in at the end of February, I had so many emails. Everyone was intrigued by the post and everyone had questions about specifically HOW to do it, exactly what I did. I’d shown the stuff I had gotten for free all month long, but everyone wanted to know *exactly* how I got those things free. So, I decided to keep very detailed notes during the next two week pay period, detailing where I went, what deals I was going for, what I got, how much I paid and how much I saved.

Well, two weeks is up. Tomorrow is pay day and it’ll be time to start all over again. So, here is the running record, with photos, of what I got, when, where, why and how. Hopefully it helps to answer any questions you had, but if not, be sure to email me and I’ll answer them if I can. Please remember, I’m new at this, so I’m not by any means an expert, but I am sharing what I know. Please also remember I only utilize certain stores, so although there might be other deals other places, I’m trying to keep to places I normally go to, places I can go to in between my travels as a “roving reporter” and a mom.

Regularly scheduled two-week “big shopping” at Aldi’s $120.40  (This is approximately $100 less than average prior to couponing and stockpiling. Two weeks ago when I did my ” big shopping” at Price Rite it was $193, still under with hardly any errands in between to get anything extra, but now this was way under, this time.)

Walmart Run (no coupons) $42.87 (10 items I absolutely had to get, no coupons and hadn’t had any for them in the past month. Time to just cave in and buy them. Even still, this is approximately $60 less than average prior to couponing and stockpiling. And, just as an aside, one of the things I bought, a giant tub of laundry detergent, ended up being something I’d get for free during the following two weeks, but at the time I didn’t know that and we were out.)

*Normally I don’t shop at Shaws because it’s so expensive, but I broke my own rule a few weeks back when I realized they had Cheerios for $1.49 and I had three coupons for $.75 off each box. I had to get a rain check for the cereal because they were out. In the meantime I got the free gallon of milk coupon when you buy 3 breakfast items, so I went back to use them together. They also had an item there that I couldn’t get at Aldi’s or Price Rite and I had a coupon for it.

However, when I went, they refused to accept the milk coupon. I will never shop at Shaw’s again.

March 3: CVS surprise trip, surprise savings

I mentioned on my last CVS trip that I needed to bring in a coupon to CVS to have them take it off my receipt because I didn’t have it with me when I went last time. It was for $1. I was going to be in and out, get my dollar and go. As I was getting my $1 back, Caroline went and scanned my card in the machine and out popped $5 in Extra Bucks. With them we bought 2 laundry detergents on sale for $1.99 (happened to be the brand we usually buy, Xtra) and one shampoo and paid nothing. As we were walking out, I saw nail polish remover (which was on my shopping list for next week) with a coupon on it: buy a 2pack of CVS brand nail polish remover ($4.99 for the pack) and get $2 Extra Bucks at the register. So we went back in, bought the remover and used the $2 in Extra Bucks to get a third bottle of detergent. The sale on the detergent was $1.99 but it ended that same night, so that’s why I went back in and bought the remover so I wouldn’t miss the sale.

And best of all….when we went to pay for the nail polish remover to get the extra bucks, they didn’t print out. Upon a closer look, it turned out the label on the nail polish remover was expired at the end of January. So I told them forget it I didn’t want the remover or the detergent. But, they were able to print out $2 ECB for me anyway, which I then did use on the detergent.

Important lessons from this trip:  1) Always scan your card whenever you’re in CVS. 2) Always bring back coupons to take off your receipt if you get them in a reasonable amount of time after you shopped. 3) They will honor expired Extra buck offers if they are advertising them. 4) Always have your coupons with you if you’re going into a store. You never know if you’re going to “need” to shop. If I’d needed a coupon for the remover or the detergent I would’ve had it with me even though I hadn’t planned to buy anything while I was there. You just never know.  5) The CVS Beauty Club rocks. That’s how I keep getting these “surprise” $5 Extra Bucks. Every $50 you “spend” you earn $5 back in EB even if what you “bought” was free or almost free.

Free Milk Coupon requires that you buy 3 breakfast items. We needed cinnamon bread for french toast and sandwich bread for lunches, those count as the three items. I had a coupon off the two cinnamon breads and of course, the milk was free.

March 8: Aldi’s Run: Originally I went in for my end of pay period pick up of fresh fruits and veggies, milk, eggs etc. That’s usually about a $25-$30 or so run. However, they had Steel Cut Oats in, and on sale. I had to buy several containers to stock up since I use them often and they are expensive. That and a couple of other extras made my run a $47 run instead.

We go through one box of waffles per week on average and one box of toaster strudels per week also. We have enough waffles to last approximately....three months. I won't need to buy them again til summer!!

March 10: Just when I thought I was done….

I couldn’t help myself. I received not one, but TWO more Eggo Waffle $1 off three boxes coupons from my friend Pam. The fact that the sale at Target was going on for just one more day was all I could think about. (If you remember the sale was $2 per box and buy 5 get a $5 Target card.) I thought about it for two days, do I go back, or don’t I?

I went back. I opted to buy six boxes to use my two coupons. I used my free gift card to get Pillsbury Toaster Strudels, which I also had a coupon for, $1 off three boxes. So I spent $10 and my $5 gift card.

Here’s the lowdown on our final numbers

GROCERY SHOPPING:

Running 2 week grocery tally: $181, even with enough steel cut oats to sink a boat. This includes doing a “big shopping” as well as my end of the pay period pick up of the milk, eggs, veggies etc. This is much less than normal, well below budget
Walmart trip: $43

COUPON SHOPPING:

Total spent over 2 weeks: $182  ($91 per week)
Total earned free product stockpiled as a result of coupons: $143   ($71.50 per week)

Rebates earned this pay period:

$15 P&G Best in Beauty
The best thing about this rebate was that a while back I’d downloaded the form to my desktop from an email and then forgot all about it, so I didn’t even realize it when I was shopping that the things I was “buying” (Olay, Cover Girl, Head & Shoulders) were qualifiers for a rebate. Later I looked to see what that was on my desktop. It was the rebate and I’d met the qualifications. $15 more back in our pocket!

So there you have it….

Overall, I spent MUCH less on grocery shopping this month and slightly more than last month on coupon shopping but I got more than $140 in free product including what are normally expensive medications, in the process. And…lots of waffles. However, my coupon spending amount is still MUCH less than what all of my Walmart, Target and CVS trips used to be prior to couponing and on those trips I never earned anything for free. My Walmart shopping alone was $100 a trip usually. I have stayed with my goals of 1) only buying what we need, use, run out of, and nothing just for the sake of buying it, and 2) of only going to my usual places, and 3) only buying what we can store. Thankfully, we have Grandma Grello’s freezer in our garage or I could not have made good on all the waffle coupons and sale.

I am spending much less and earning much more.

And, that’s the way I like it!

Cauliflower Au Gratin

Cauliflower AuGratin got four thumbs up this week. It was a recipe I found on Pinterest.

I have had Cauliflower Au Gratin before but I have never made it myself. I’ve never even thought of making it until I happened upon it while perusing Pinterest last week. As I’ve said before, I’m always on the lookout for new things to try, new ways to have “the same old thing.” I thought to myself, “Well, they like mac and cheese,” and figured I’d try this. That’s Mom logic for you.

Funny thing is, I was almost right. Overall, everyone except Alex loved it. Alex had peas though, so everyone was happy.

Here’s the recipe, straight from “Point-less Meals,”  the blog that I pinned on Pinterest. I did have to make some adjustments because of what I did or did not have in my house at the time I made it. I’ve noted them.

INGREDIENTS

serves 12 ( 4 points + )

3 pkgs. ( 16 oz each ) frozen cauliflower (I used a head of fresh, could’ve used two or three though.)
1 large onion, chopped (I used half a large onion.)
⅓ c. butter, cubed
⅓ c. flour
½ tsp. salt
¼ tsp. ground mustard
¼ tsp. pepper
2 c. skim milk (I had 1%)
½ c. grated Parmesan cheese

Topping:
½ c. whole wheat soft bread crumbs (I used plain bread crumbs)
2 T. butter, melted
¼ tsp. paprika
DIRECTIONS

Cook cauliflower in a Dutch oven with a little water; drain. (I steamed mine.)

Place cauliflower in the bottom of a 13 x 9 dish coated with cooking spray.

Meanwhile, in a large saucepan, melt butter. Add onions and cook until tender. Stir in flour, mustard, salt and pepper.

Gradually add milk, stirring and cooking until thickened. Remove from heat; add Parmesan cheese. Stir until blended.

Spread cheese mixture over cauliflower.

Mix bread crumbs with butter and paprika. Sprinkle over cheese mixture.

Bake, uncovered, at 350 for 30-35 minutes.

Vanilla pudding dessert with vanilla wafers, strawberries and bananas

A perfect treat for the end of the week!

If so, treat yourself to a super-simple dessert that I found on Pinterest (been on there yet??) and just had to pin for future use. The future came sooner than later! If you click on the underlined words above, it’ll take you right to the blog post where I got the recipe from.

In the past, I’ve mixed vanilla wafers, vanilla pudding and bananas for a treat before, but this recipe just looked so much better because she served it in mason jars, and I just so happened to have mason jars downstairs, sitting there doing nothing.

I also happened to have both bananas and strawberries, which in my opinion go so well together, so I figured I’d throw some of those in as well.

I got my ingredients at Aldi's, including the bananas, the strawberries and the milk.

To make this, I used two small packages of instant vanilla pudding, just as I would to make pudding for my family usually, plus three bananas and almost the entire package of strawberries. I don’t have a specific number of vanilla wafers to tel you that I used, but I made six mason jars worth of dessert, so I used almost the whole package of vanilla wafers. I just threw them into a gallon-sized ziploc bag and used my rolling pin to crush them up.

You have to let the pudding chill once it’s mixed, so I mixed it first and did the other ingredients next. Once it was sufficiently solid, I started my assembly line of layering the ingredients in the jars.

Assembly line layering worked best for creating this dessert.

The layering was easy. I simply layered the vanilla wafers first, then the pudding and the fruit. I did another layer of wafers, a little more pudding and fruit and then whipped cream on top with a couple of strawberries for a garnish. If you have any of those nice long iced tea spoons, they are the perfect utensil to use for eating this type of dessert.

This is also the kind of thing that doesn’t keep well, so once you make it, you have to eat it right away or else the vanilla wafers get soggy inside the jars and obviously you can’t refrigerate it with the cream and strawberries on top either!

I think it’s a perfect dessert for company, for summertime, or….for the last day of February Vacation!! I also saw a comment on the original post that said someone put in mini chocolate chips too! Wouldn’t *that* be yummy?! I didn’t have any, but it’s on the list for next time!

Happy Valentine’s Day! My gift to you: Apricot Chicken two ways

Happy Valentine's Day from me to you!

Today is Valentine’s Day, and to show my love for you, I’m giving you not one, but TWO recipes today!

Both recipes are for the same dish: Apricot Chicken. One is baked in the oven and one is a crock pot recipe sent to me during my crock pot recipe contest last month. It was the first one I tried, sent to me by Joanna Sprik at Jolyn’s Cupcakes and Candies. Stop over at her blog and check it out!

Her recipe was very simple and tasty too! My only problem….I made it on a day I was recovering from being sick, and because I wasn’t 100% yet, I forgot to take a picture of the final product, and it was so good! Next time I make it, I’ll post a photo of it!

JOLYN’S CROCK POT APRICOT CHICKEN

Just two ingredients to go in the crock pot with your chicken!

INGREDIENTS

24 oz apricot preserves (2 12oz jars),

6 seasoned chicken breasts (can use tenders too)

1 envelope onion soup mix

I put it all in my crock pot and cooked it all day long, served it over white rice.

BAKED APRICOT CHICKEN

I posted this recipe on Facebook a couple of years ago, it’s one I’ve been making for years. Here it is now, as I posted it then:

Apricot Chicken A Norman LeClair Recipe (The Red Rooster Restaurant, NK RI)

I’m writing the original recipe with my own modifications added in. I’ve made this for so many years that I’ve kind of modified it to my liking. Basically so it’s like dessert instead of dinner. 🙂

2 whole chicken breasts, skinned, boned, halved and flattened
I actually use several (depending on how many people)boneless, skinless tenders or breasts instead of going through all the work of skinning and boning the whole breasts.

1/2 cup bread crumbs
Recipe calls for flavored, I use plain.

4 mushroom caps, stems removed
sometimes I skip these if I don’t have any mushrooms. Not crucial to recipe, in my opinion.

2 teaspoons butter

Glaze:
1/2 cup Apricot Jelly
2 garlic cloves, minced
1/8 tsp. ginger
1 tablespoon white vinegar
1 tablespoon soy
Recipe also calls for pinch of crushed red pepper, I don’t use it.

In flat dish, press crumbs into chicken on both sides; reserve.

Mix well in bowl: apricot jelly, ginger, garlic, red pepper, vinegar, soy sauce; reserve.

Butter or spray one oven proof casserole dish.

Lay out chicken in dish.

Top with mushroom caps.

Spoon glaze on chicken and mushrooms.

Dot with butter.

Bake at 400 for 20 minutes. Remove to serving plates and spoon remaining glaze on chicken.

I serve on a bed of white rice.

Baked Apricot Chicken

Easy “Chinese” Beef and Broccoli

Easy "Chinese" Beef and Broccoli

You can tell this is my dinner plate. Nothing is touching. Lots of room for possible run-off!

We love Chinese food at our house, and every once in a great while we splurge and get some takeout. In the meantime though, when we can’t do that, I try to find Chinese food-like recipes to make at home. I’m also always looking for new things to do with stew meat, which is one of the staples on our shopping list.

A couple of years ago I found this recipe online, on About.com when I searched for ways to use stew meat.

Normally I serve this over white rice, and I actually do put mine on top of the white rice, believe it or not. But, every so often we try to create our own version of Chinese Fried Rice, and this was one of those times. I used the Instant Brown Rice from Aldis with their frozen peas and I cooked the rice in the microwave first, as I normally would. Then I sauteed it with olive oil and soy sauce and the peas in a large frying pan. It came out so well! I thought we were out of eggs, or I would’ve scrambled some in as well. Turns out, we weren’t, and I could’ve done it after all.

Here’s the recipe as it was on About.com with my modifications in there too.

I mix the gravy mix right in the 2c. measuring cup.

INGREDIENTS

2 to 3 cups leftover steak thinly sliced into 1″ strips (aka stew meat in my house)
1 tablespoon vegetable oil
2 cups fresh broccoli florets (or 1 16 ounce bag frozen florets)
1 package dry brown gravy mix (I use two)
1 cup water (I use 2 cups because I use two packs of gravy mix)
pepper to taste

I add in a package of fresh sliced mushrooms if I have them.

Cooked white rice or Chinese Noodles (I do rice.)

DIRECTIONS

Another one pan meal!

Heat oil in large frying pan over med. high heat. Add sliced steak strips (stew meat) and saute until hot, about three minutes (longer if frozen as mine always is.) Add broccoli (uncooked) and mushrooms if you choose to use them, and mix.

In a small bowl stir together the gravy mix, water and pepper (I never use pepper.) Add to the broccoli and beef in the pan.

Heat to a boil, stirring occasionally.

Reduce heat to medium low, cover and simmer about 10 minutes.

Serve over rice or noodles.
Makes 4-5 servings

New after school snack recipe: Peanut Butter Yogurt Dip

I’m a couponer now, I told you last week. In my new life as a couponer, I have discovered something in the coupon fliers: Recipes! Last week I found one that looked like it would be a great after school snack that all my of kids and I would like. It only had two ingredients (even better!) and both were things I almost always have on hand. I decided to try it this past week and my kids inhaled it.

The thing I like about dips with veggies and/or fruit is that I find that my kids will consume much more fruit or veggies with a dip than they would if they came home and I directed them to the fridge for a piece of fruit. So, I like to find new and different dips for them and I love to surprise them with something new when they come home. They show up ravenous, so I like to have their snack on the table when they get in, before anyone has a low-blood sugar meltdown. Sometimes I’ve only just gotten in myself, so my after school snacks need to be quick and easy, just like all my other recipes and meals.

So, here’s our newest addition to the recipe files. I’ve already made it twice in one week, it was so good. Please note that if you have a peanut allergy in your house, this would not be a good one for your family, my apologies.

You only need two ingredients for this recipe! Love it!

PEANUT BUTTER YOGURT DIP

1/2 cup creamy peanut butter

1 cup non-fat vanilla yogurt

Dipping suggestions: bananas, apples, graham crackers

Mix the yogurt and peanut butter together until completely mixed. Try to refrain from licking the spoon over and over before the kids come home. 🙂

When I first made this I only had single-serve yogurt cups, 4oz each but they worked out great, I just used two. When I made a stop at the store later on in the week I picked up a bigger container and more peanut butter. The second time I made it, it was a weekend, and Alex mixed the whole thing herself, so even kids can make this dip pretty easily.

That’s it! That’s all there is to it. The first batch I made had a little left over, the second time I made it, the entire thing went. Give it a try and see what you think!

Recipe of the day: Brown Sugar Brownies

Brown Sugar Brownies

These brownies melt in your mouth!

I found this recipe on the back of a package of Domino Light Brown Sugar a while back. The title alone made me want to try them. I love brown sugar. You can always tell if a recipe is going to be good by how the batter tastes, and this batter is delicious.

The recipe is quick and easy, and it will make a great dessert for the Superbowl game, or really any time you want a delicious dessert!

INGREDIENTS

1 cup packed light brown sugar

1/2 cup (one stick) butter or margarine, softened

2 eggs

2 oz. unsweetened chocolate, melted

1/2 cup all-purpose flour

1 cup coarsely chopped walnuts (we don’t like nuts so I never put those in.)

DIRECTIONS

Preheat oven to 325 degrees.

Grease 8×8 baking dish.

In large bowl beat sugar and butter until fluffy.

Beat in eggs one at a time.

Beat in chocolate, then flour.

Kids can help with this recipe, which technically doesn't even need a stand up mixer.

Stir in nuts if using them.

Pour into pan.

Bake 25 minutes or until a knife inserted into the center comes out clean.

Cool in pan and cut into bars.

Makes 2 dozen bars.
