Just the other day I talked in my post about how I love meals that I can cook enough of to last more than one day or night.

Well, last Thursday’s dinner, a crock pot meal of Chicken Tacos was amazing in every department: It was fast and easy, delicious, everyone loved it, and I got four people’s lunches plus another whole dinner out of it.

“That’s amazing!” You must be saying.

“I wonder how she did that!!” You’re probably wondering.

Well here’s how it all went down:

As you know, we’ve been in need of some heavy duty crock pot cooking with the advent of the new school year. I figured that if I can do crock pot recipes four nights a week, we will be in good shape with our dinners. My friend Gina sent me this link with more than a dozen recipes for crock pot cooking. I talked about it last week in my What’s for Dinner Wednesday post as well.

So far we’re up to six crock pot meals and we’re pretty much six for six. Everyone’s liked everything.

Last Thursday I tried the Chicken Taco recipe, which you can find here. It called for Pico de Gallo, which I didn’t have but I had two large tomatoes and a regular onion so I adapted this recipe from Allrecipes.com to make my own, fresh batch, and I threw it on there.

Amazing.

We served it with a choice of hard or soft taco shells and we had toppings of nonfat refried beans, nonfat sour cream, lettuce, tomatoes, and shredded cheddar cheese.

Those toppings are an important detail.

The reason they matter is that forever, Elizabeth has been asking for a seven layer dip type of recipe that she saw in her lunchbox cookbook, as her lunch. I had actually seen something similar, called Burrito in a Jar on Skinnyms.com and I thought she’d like that. I kept saying that the next time we had tacos I’d do the dip for her lunch the next day.

Additionally, Alex had been asking for a Taco Salad ever since we had it at our annual Labor Day cookout. Someone brings it every year, and Alex declared it to be so fabulous that she wanted it for lunch asap. I had been giving her the same answer; next taco meal, she’d have Taco Salad for lunch.

Well, the leftovers for this meal provided all the fixings for both the dip and the salad. I prepped everything for everyone’s lunches as I cleaned up from dinner, basically using the leftover toppings from the tacos to make the dips and salad. I put some multigrain tortilla chips into ziploc bags and four lunches went into the fridge, all made for the next morning, when dinner was cleaned up. Done and done.

You’d think that there was no place else to go with this meal, that we’d used it and used it again, so it was done, but it wasn’t! I actually had not yet used the leftover chicken and Pico de Gallo that had cooked for the hot portion of the tacos. I’d only used the leftover toppings. So I saved them, on the advice of my friend Gina, who said that I should consider making Tortilla Soup with the leftovers, on another night. Coincidentally, my other friend, Paula, just happened to post a recipe for Tortilla Soup on her soup blog, My Soup For You, the very next day. Gotta love friends like that! They work together and don’t even know it. One’s in Florida, one’s in Maryland, and I’m here! But we all got my dinner for Monday night, prepped and planned!!

To make my own Tortilla soup, I used Paula’s recipe as a guide. I threw in the leftover chicken and pico, with a 32 oz. container of chicken broth plus two cups of water with two boullion cubes dissolved in it (I had run out of the containers of broth, but would’ve just used two if I had them.)

In addition, I threw in a can of black beans (rinsed), about a half bag of frozen corn, and at the last minute I decided to saute half a green and half a red pepper and throw that in near the end of the cooking time.

I served the soup with nonfat sour cream, nonfat shredded cheddar cheese, and tortilla chips that you could crush up and put into the soup if you wanted to.

It was amazing. I loved it, Liz loved it, Don loved it. Alex and Caroline did not love it. But they are the pickiest of the five of us, so I wasn’t surprised at all that it wasn’t up their alley.

I’d totally make it again.

And the best part…..there was leftover soup.

For my lunch for my lunch the next day.

This was by far the furthest I have ever stretched a meal of ours. It was inexpensive to make too. Nothing in it cost very much and every part of it was delicious.

If you’re looking to stretch your budget and your meals, I highly recommend you try this out!

What’s For Dinner Wednesday: Macaroni & Shrimp Salad

This macaroni and shrimp salad is something we look forward to all year long!

If you’re like me, you’re always looking for the perfect side dish to go with the cook-on-the-grill type of meals that happen all summer long. Today’s recipe is one of those perfect side dishes.

As always, it’s super-easy and super-delicious. And as is typical, it’s originally from my mom. She’s been making it ever since I can remember and we’ve been making it on our own for years as well.

You can tell that this photo is of my dish because I actually do put my tomato/cucumber/olive salad in a separate bowl so that nothing runs together, and also because I eat absolutely nothing on my hot dogs. I barely eat the bread. But, I eat every speck of that macaroni salad!

Try this recipe out for your next cookout, I know you’ll love it as much as we do!

MACARONI & SHRIMP SALAD

INGREDIENTS

2 cups elbow macaroni (in general we use a one pound box of pasta and adjust the rest of the ingredients accordingly as well.)

2 stalks celery, thin sliced

1 can tiny shrimp, rinsed

3/4 cup Miracle Whip

celery salt to taste

cayenne pepper to taste

This is a great side dish to bring to those summer dinner parties and cookouts!

DIRECTIONS

Cook pasta according to directions.

Add in shrimp, Miracle Whip and spices.

Cover and cool in refrigerator completely before serving.

Enjoy!

Fun Friday: Kale Chips

Kale doesn’t sound all that fun does it?

It really doesn’t. But, I’ve chosen it for my Fun Friday post today for several reasons.

First: We had Kale Chips at the White House for the first Kids’ State Dinner last August. That whole entire trip was fun, including trying the Kale Chips which were from Samuel Wohabe, age 9, from New York.

Second: The newest winners of the Healthy Lunchtime Challenge were just announced yesterday! The Rhode Island winner, Samantha Mastrati, is from Cranston and a friend of ours! She will have so much fun on her trip!

Finally: These were a fun after school snack for the girls to try out. Although Caroline had them and enjoyed them on the trip, no one else had, so I thought this would be a fun snack to share with them.

To make these is super-easy. I bought one bunch of kale for just over a dollar at the store and it made lots of chips!

The prep instructions are minimal and the cook time is quick. Within minutes you have ahealthy, crunchy snack.

Here, according to Samuel’s instructions is the recipe for Kale Chips.

KALE CHIPS

INGREDIENTS:

1 bunch kale, stems removed and leaves
torn into bite-size pieces
2 tablespoons olive oil
¼ teaspoon salt

DIRECTIONS:

Preheat the oven to 400°F.

On a large nonstick baking pan, drizzle the kale with olive oil, season with salt, and toss until
evenly coated.

Bake until crispy, about 15 minutes.

Fun Friday: Spiced Chickpeas for an After School Snack

I forget sometimes that as much as I love sweets, that there are some people in this house who like the salty, more savory flavored foods. My three kids have a mix of tastes but my snacks are often the sweet kinds because that’s what I like best.

However, recently I found a recipe in the Stop and Shop Magazine for Spiced Chickpeas, which are roasted in the oven, and although I didn’t think I’d personally love them, I decided to try them as a snack for my family. The funny thing is, I personally loved them. Everyone loved them. In fact, I just bought two more cans of chickpeas so we can make them again since it’s been a little while since I made them last.

The recipe was simple and had very few ingredients besides the chickpeas, so it makes it tasty, easy, extremely healthy and affordable. If you’ve never tried them before, if you’re a sweet treats kind of person yourself, I encourage you to step out of your snacking comfort zone and give these a try!

SPICED CHICKPEAS

Makes four 1/2 cup servings

INGREDIENTS

1 can (15.5 oz.) chickpeas (garbanzo beans) about 2/3 cups

1 1/2 tablespoons extra virgin olive oil or canola oil (we used olive)

1/2 teaspoon paprika

Dash of cayenne pepper or to taste

1/4 teaspoon of ground cumin

3/4 teaspoon garlic powder

1/2 teaspoon sea salt (optional)

Nonstick cooking spray

DIRECTIONS

Preheat oven to 400 degrees.

Drain, rinse and dry chickpeas on paper towels.

Combine olive oil and spices in bowl.

Add chickpeas and toss until evenly coated.

Spread chickpeas evenly onto a baking sheet sprayed with non-stick cooking spray.

Bake for 25-30 minutes until golden and crispy.

Shake chickpeas around every 10 minutes or so for even crisping and to prevent sticking.

Remove baking sheet from oven and transfer chickpeas to a serving bowl. Enjoy while warm!

Per serving: 180 calories, 7 g fat, 1 g saturated fat, 0 mg cholesterol, 26g carbohydrates, 5 g fiber, 0 g sugars and 6 g protein

Part of my Friday routine usually includes a visit to my Grandma Rose with my kids after school. We spend some time together, have a few snacks and treats and then off we go until the next visit.

One thing Grandma Rose is famous for is her Fried Zucchinis. She has a knack for slicing them, coating them and frying them perfectly. Whenever there is an event, she makes about 100 of them.

The funny thing is: she doesn’t even like them!

Let’s just say it’s a good thing I am not the one responsible for bringing them to events. I’d probably start out with 100 and end up with about 50 of them by the time I arrived.

Lately, with our low fat dietary restrictions, I’ve been finding other alternatives to some of our favorite foods, and this recipe from the Sugar Free Mom blog was a great option for us. The author of the blog, Brenda is a local mom in our community.

The zucchini rounds are baked, not fried and they are much lower in fat. Brenda adds in Parmesan cheese to her recipe, where Grandma Rose does not, but it adds a great flavor to it.

Here’s the recipe as Brenda has it on her blog. Be sure to visit her blog as she has loads of great recipes on there, and she has lots of healthy options. No matter what your restrictions are, you will find something you like on her blog.

Sugar Free Mom’s Oven Fried Zucchini Rounds

INGREDIENTS

  • 3 large zucchini, sliced (6 cups sliced rounds)
  • 1 whole egg
  • 1 egg white
  • 1 1/2cups Parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • olive oil cooking spray
  • DIRECTIONS
  • Preheat oven to 425 degrees.
  • Spray baking sheets with cooking spray.
  • Beat the egg and white in a shallow bowl, set aside.
  • Place the Parmesan, garlic powder and parsley in another bowl and mix well.
  • Dip zucchini rounds in egg mixture then in Parmesan and place on baking sheet.
  • Do not overlap zucchini on baking sheet.
  • Bake for 10 minutes then flip them over and bake until 10 minutes or until the are golden brown on top.

A few weeks ago we hosted our daughter’s First Communion at our house. Besides cake, we had several other desserts and today I wanted to feature one of them.

My friend Paula had sent me this cute little 48 piece mini dessert set in the mail,  a set from Mozaik. When she saw it in a store near her, she said she thought it would be perfect for First Communion, and she was right.

Around the same time, the girls and I had attended an event at our local library that I covered for the newspaper. Advertised as a Teen Cooking Challenge, the kids had to each create their own healthy trifles, using pudding, whipped cream, and fresh fruit.

I never imagined that I’d find my First Communion dessert at a kids’ cooking event at our local library!

When I saw the kids’ trifles, I knew I’d found my dessert, simple as it was, for First Communion.

And when I say simple, I mean really.simple.

The desserts I made were in two variations: Jello Sugar Free, Fat Free instant cheesecake flavored pudding or chocolate flavored pudding, prepared using skim milk, and topped with a low fat topping from Aldi’s that’s like Cool Whip. I topped the cheesecake desserts with fresh strawberries and the chocolate desserts with fresh blackberries.

Yup. That’s it!

Each little cup has a matching little spoon, which made for a really cute, yet seemingly elegant, healthy dessert! They were such a hit, there were just a couple of them left over at the end of the day.

There are so many cute ideas that you could use this set for, both desserts and appetizers. Picture a healthy veggie dip in the bottom with a few celery, zucchini and carrot sticks sticking out, or picture individual shrimp cocktail sauces with a few shrimp. Perfect, right?

Right.

This week I was debating what to post for my What’s For Dinner Wednesday recipe when I came across a new one. I was scrolling through Facebook when I saw a post on Shop Girl for these Cheesy Quinoa and Broccoli Patties.

As always, I looked to see if I had all of the ingredients and I did. I had just cooked up a batch of quinoa the night before, so that was already done, and I had everything else for them.

In the past we have made Zucchini Fritters and even Potato Latkes, and we love them all. I thought this might be similar and I thought my chance for everyone liking them was pretty good too.

I threw the ingredients together pretty quickly, cooking up the onion, and chopping the broccoli. I used wheat bread crumbs, egg substitute and nonfat cheddar cheese in order to keep within our dietary restrictions.

However, when it came time for cooking my patties, I ran into trouble. It wasn’t trouble from the recipe, it was my pan that was not cooperating. It’s not the best pan and on occasion, things will stick. Today was one of those occasions. Each time my patties would get nice and crisp, when I went to turn it over, the layer of crispiness would stay stuck to the pan.

I was tempted to abandon the whole thing, but these really did look and smell good. I didn’t want to let it go. I gave it some thought, and then decided to remove them from the frying pan and olive oil and place them into the oven at 350 degrees and bake them to finish them off. That worked out great.

However, I still had a batch that hadn’t gone into the pan  yet. By now Don had come home, and to my rescue. When I showed him the leftover batter, enough for about five more patties and too much to throw away, he opted to try using our counter top griddle and grill them. Again, it worked out great. Next time, this would be my method of choice to cook them.

I’m glad we kept to it. The recipe was a hit with four out of five of us and there was not even one left over. Don even tried dipping them in Sweet and Sour dipping sauce, which was a great addition.

Tonight as I said goodnight to my oldest daughter, I was shutting off her light on my way out of the room, when she called out to me, “Hey Mom….make those broccoli things again from tonight. They were really good.”

That’s a thumbs up, if I ever heard one.

I encourage you to visit Shop Girl’s blog to see the original post so that you can see what *her* patties looked like, since she didn’t have the technical difficulties I had. Her photos are great and the recipe is a good one. For my family, I doubled it, so we had 12 patties, not six. Additionally, my quinoa was already cooked and cooled, this recipe talks you through cooking it first, and letting it cool. Be sure to rinse your quinoa well before cooking it.

INGREDIENTS

1/2 cup quinoa
1 cup water
5 large broccoli florets
1 small onion, diced
1/4 cup breadcrumbs
1/4 cup shredded cheese
1 large egg
Salt and Pepper for seasoning
Olive oil for cooking
DIRECTIONS
1. First, cook your quinoa according to the directions on the packaging. I cooked mine by combining 1/2 cup of quinoa with 1 cup of boiling water, then letting it come to a boil, and simmering, covered for about 15 minutes. Once the quinoa has absorbed all the water (this shouldn’t take longer than 15 minutes), put it on a plate and let it cool completely.
2. Next, saute your diced onion until it’s soft and translucent. Set aside and let cool completely. Cook your broccoli until it has softened a little bit, then let it cool as well. Once the broccoli has cooled completely, dice it into small pieces.
3. Now that you have everything ready, in a large bowl, mix all the ingredients together, leaving the egg until the end. Mix well so you have a smooth, wet mixture that will allow you to make patties that will stick together.
4. Heat some olive oil in a pan, and make your patties. I made each using 1/4 cup of the mixture. Just make a ball out of the mixture, and squash it down a little bit. Cook each patty for about 7 – 8 minutes on each side on medium heat. You want the patty to develop a crust, but not to burn, so watch them carefully. Let cool for a couple of minutes before eating.

What’s For Dinner Wednesday: Brussel Sprouts

Ewwww….brussel sprouts!!!

Isn’t that what everyone always says? When people want to come up with the grossest vegetable to make you eat, isn’t it always brussel sprouts?

I guess I’d always just taken their word for it because in my whole life I had never had a brussel sprout until two nights ago. I think I just always assumed they’d be gross because everyone says so. It wasn’t until recently when someone said, “They’re just like baby cabbages,” did I realize that I might actually like them, as I like cabbage.

I took the next step: I bought some at Aldi’s.

Then I forgot I had them until my daughter was home sick, watching Cupcake Wars on TV and one of the challenges was to incorporate brussel sprouts into the recipe.

GASP!

“I have those in the fridge,” I said to Elizabeth.

We decided to give them a try. I looked up recipes and came up with this one for roasted brussel sprouts. Sounded basic, easy, and delicious.

Don came home from work that night and said, “I was talking to someone at work about how to cook brussel sprouts, and she said we should roast them with salt, pepper and olive oil.”

Well that was funny, same recipe I’d come up with.

So we tried them.

I loved them.

I was the only one.

Don liked them, Liz could take or leave them, and Caroline and Alex didn’t like them at all.

Bummer.

However, because I loved them I am posting the recipe. I had the leftovers again, the very next night.

I’d love to know though, how do you cook your brussel sprouts if you are someone who makes them? Please share any good recipes or tips with me.

And, a couple of things to note: Don parboiled them in the microwave first, just to jump-start the cooking. And, he also sprinkled garlic on them before roasting, along with the salt and pepper.

ROASTED BRUSSEL SPROUTS from AllRecipes.com

Ingredients

Original recipe makes 6 servings Change Servings
1 1/2 pounds Brussel sprouts, ends trimmed, yellow leaves removed
3 Tablespoons olive oil
1 teaspoon kosher salt (we used regular)
1/2 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 400 degrees F (205 degrees C).
  2. Place trimmed Brussels sprouts, olive oil, kosher salt, and pepper in a large resealable plastic bag. Seal tightly, and shake to coat. Pour onto a baking sheet, and place on center oven rack.
  3. Roast in the preheated oven for 30 to 45 minutes, shaking pan every 5 to 7 minutes for even browning. Reduce heat when necessary to prevent burning. Brussels sprouts should be darkest brown, almost black, when done. Adjust seasoning with kosher salt, if necessary. Serve immediately.

What’s for Dinner Wednesday: Cauliflower Soup

Recently, my friend Karen sent me the link to a soup she really loved. It’s so fast and has very easy ingredients, and it’s one that I can drink in a mug, so it’s good for the days where I can’t stop for lunch. The link was to the blog Skinnytaste, and this soup has been a huge hit at our house.

The recipe originally calls for a head of cauliflower, and I have to say, it’s absolutely the best when made with fresh cauliflower. It’s thicker and tastier. But, I like keeping bags of frozen veggies on hand in my freezer for when I’m out of fresh veggies and I like that this recipe can also be made using the frozen ones.

Since trying this recipe out over February vacation, I’ve made it at least four or five times. You literally throw everything into the pot and let it simmer. When it’s done you blend and eat. It’s that simple. It’s completely healthy and it makes a great meal or even a great in-between-meals snack. Sometimes Caroline will have this as her after school snack. I’ll take that any day for a healthy choice!

The big, big deal though is the fact that prior to receiving this recipe, I did not have an immersion blender, otherwise known as a hand blender. I tried making it without one, and I could not. It was kind of a mess, to say the least.

I now have this immersion blender, and I SOOOO love it. I wanted one but I did not want to spend a lot of money so my friend Debra recommended this one from Walmart and it’s been great. I’ve used it for this soup and my cream of broccoli soup. I’ve also used the other attachment piece for making instant pudding and the batter for french toast.

The immersion blender is essential for this recipe, and I highly recommend both the recipe and the blender to make it happen! Below is Gina’s recipe from Skinnytaste, and I hope you’ll visit her blog and check it out!

CAULIFLOWER SOUP
INGREDIENTS:

  • 1 large head cauliflower – chopped
  • 1/2 cup chopped onions
  • 4-6 cups water
  • 2 chicken bouillon cubes
  • salt and pepper to taste
  • **we use chicken broth instead of water and bouillon cubes.

DIRECTIONS:
In a 5 quart saucepan, add all ingredients. Cover and simmer until vegetables are tender (about 20 minutes.) Puree with an immersion blender until smooth.

We all love Chinese food, but it’s not something we get very often. I was thrilled when I recently found a recipe on the Red Barn Blog for a homemade version that was healthy. I actually believe the post was a guest post on the Red Barn Blog by the Budget Gourmet Mom, a blog I also follow.

I decided to try it a couple of weeks ago, although not following the recipe exactly, but rather using it as a guide when making ours. It was such a huge hit, I’ve already made it again. Five thumbs up, both times.

I like this recipe because you can use whatever vegetables you have on hand and throw them in. I can foresee using sugar snap peas or pea pods when I have them next, or throwing in zucchini when I make it again.

Here is the recipe as it’s written by the Budget Gourmet Mom on the Red Barn Blog. I’ve made a note of any changes I made. This was great served with Duck Sauce or with Sweet and Sour Sauce on the side, both of which are nonfat.

INGREDIENTS

  • 2 cups cooked cold white or brown rice
  • 1 tablespoon canola oil  (We used olive oil.)
  • 1 small onion, diced
  • 2 cups fresh vegetables, I used broccoli and carrots
  • 2 large eggs, lightly beaten (We used egg substitute.)
  • 3 tablespoons soy sauce
  • DIRECTIONS
  1. In a large skillet preheat oil over medium-high heat.
  2. Add in the rice and fry, tossing carefully with wooden spoon. Add the vegetables and continue to cook for 7 minutes, stirring occasionally.
  3. Push the rice off to the side of the pan and place the beaten eggs next to the rice. Cook, stirring the eggs until firm. Fold into the rice.  (I cooked my eggs in a separate frying pan.)
  4. Add the soy sauce, toss, and serve.
