This Vegetable Fried Rice was a huge hit!

We all love Chinese food, but it’s not something we get very often. I was thrilled when I recently found a recipe on the Red Barn Blog for a homemade version that was healthy. I actually believe the post was a guest post on the Red Barn Blog by the Budget Gourmet Mom, a blog I also follow.

I decided to try it a couple of weeks ago, although not following the recipe exactly, but rather using it as a guide when making ours. It was such a huge hit, I’ve already made it again. Five thumbs up, both times.

I like this recipe because you can use whatever vegetables you have on hand and throw them in. I can foresee using sugar snap peas or pea pods when I have them next, or throwing in zucchini when I make it again.

Here is the recipe as it’s written by the Budget Gourmet Mom on the Red Barn Blog. I’ve made a note of any changes I made. This was great served with Duck Sauce or with Sweet and Sour Sauce on the side, both of which are nonfat.

INGREDIENTS

  • 2 cups cooked cold white or brown rice
  • 1 tablespoon canola oil  (We used olive oil.)
  • 1 small onion, diced
  • 2 cups fresh vegetables, I used broccoli and carrots
  • 2 large eggs, lightly beaten (We used egg substitute.)
  • 3 tablespoons soy sauce
  • DIRECTIONS
  1. In a large skillet preheat oil over medium-high heat.
  2. Add in the rice and fry, tossing carefully with wooden spoon. Add the vegetables and continue to cook for 7 minutes, stirring occasionally.
  3. Push the rice off to the side of the pan and place the beaten eggs next to the rice. Cook, stirring the eggs until firm. Fold into the rice.  (I cooked my eggs in a separate frying pan.)
  4. Add the soy sauce, toss, and serve.

You all I know how much I love a good cookie.

A few years back I discovered a recipe for Snickerdoodles and ever since, I have used them on my trays for Christmas.

This year, before Christmas even came, way back in October, I found a recipe on one of my favorite blogs, Budget Gourmet Mom, for Whole Wheat Snickerdoodles.

I knew even back then, that I’d be trying out this recipe for my cookie trays this year.

Little did I know then, that I’d be overhauling our entire cookie tray plan as well. Thankfully, these cookies were easy to adapt to the lowfat diet we needed to incorporate.

Here is the recipe from the Budget Gourmet Blog, along with any notes or changes I might’ve made along the way to fit our needs. Snickerdoodles are great any time of year, and they’re a great recipe for involving your kids in the kitchen, so give this new recipe a try!

BUDGET GOURMET MOM
WHOLE WHEAT SNICKERDOODLES
INGREDIENTS

  • 1/2 cup butter, softened (I used I Can’t Believe It’s Not Butter sticks for my baking this year.)
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

DIRECTIONS

Preheat oven to 375°.

In a medium bowl cream the butter and brown sugar.

Add the egg and vanilla and mix until combined.

In a separate bowl sift together the flour, baking soda, cream of tarter and salt.

Add to the creamed mixture and stir until it forms a dough. It helps to work it with a rubber spatula until it comes together.

In a small bowl mix the additional sugar and cinnamon.

Form tablespoon sized balls, roll in the cinnamon and sugar,  and place on a baking sheet 2″ apart.

Press slightly with the bottom of a cup (we used our fingers) and bake 8-10 minutes.

Not just rolling, but tasting is another favorite job for my little helpers.

After rolling and placing on the trays, pat them down slightly.

Do you ever get tired of the same old thing?

I love asparagus! I found out earlier this year that most of my kids like asparagus, so I was so thrilled when Aldi’s started carrying it in their frozen veggies section because it meant that we could afford it and afford to have it any time we wanted to.

I bought it by the boatload. We had it all the time.

I’m tired of asparagus now.

Well, not tired of asparagus so much as I am tired of cooking it the same old way every time, which everyone likes: sauteed with oil and garlic in a frying pan on the stove, which is also the same way we make our green beans because it’s everyone’s favorite way.

I was happy to see a new cooking suggestion a few weeks back from The Budget Gourmet Mom blog that I follow. It was a recipe for Roasted Asparagus with Red Onions and Garlic and it made me wonder why I’d never thought to roast my asparagus before.

Sometimes you just need it to hit you over the head, I guess.

It also reminded me that I have another recipe for preparing asparagus that my mom used to make, so when I make that one, I’ll post it as well. I haven’t made it in years and years.

INGREDIENTS

  • 1 lb asparagus
  • 1 large clove garlic
  • a few thin slices of red onion
  • 1 tsp extra virgin olive oil

INSTRUCTIONS

  1. Preheat oven to 400°
  2. Wash and trim the asparagus. Lay out on a baking sheet and drizzle with olive oil.
  3. Mince the garlic and sprinkle over the asparagus. Top with red onion rings.
  4. Bake 10 minutes. Serve immediately.

A new after school dip from Budget Gourmet Mom

Chocolate chip cookie dough dip...how could I resist trying this one?

I follow several different blogs and one of the ones I really love is the Budget Gourmet Mom blog. I actually wait all day long to see what is going to pop up in my inbox each afternoon. She and I seem to have the same taste, the same love of chocolate and the same frugal lifestyle when it comes to cooking.

Last week when Krista posted a recipe for Chocolate Chip Cookie Dough Dip, I knew I just had to try it out.  Now Krista is not just a great cook, but she takes beautiful photos of her food. You have to go over and check them out. Everything always looks so pretty, right down to the wood on her table. It’s very different from when I take my photos, on top of the stove, the counter, or wherever I can find a space. She also has a way of writing while she shows her photos. I just love to read her blog, it’s thoroughly enjoyable.  And, Krista has a ton of kids, I think four of them, so I can’t say she has nothing better to do, because she’s super busy too.

I tried this out last week, and my kids enjoyed it, but they still stand by the peanut butter yogurt dip as their favorite.

INGREDIENTS

  • 4 tblsp cream cheese, softened
  • 1 heaping tblsp light brown sugar
  • 6 oz lowfat vanilla yogurt
  • 1/4 cup mini chocolate chips

DIRECTIONS

  1. In a medium bowl use a spoon to work the brown sugar into the cream cheese. Stir until combined.
  2. Add the yogurt and stir until creamy. You may want to use a mixer to fluff it a bit but it’s not necessary.
  3. Fold in the chocolate chips and serve with graham crackers, fruit, or pretzels.
