Well here it is, the last week of June!

Hooray!!! We made it to summer vacation! I will admit, there were days and nights I didn’t think it would ever, ever, EVER get here, and the final month of the school year was absolutely brutal to get through, but we did it. We have a newly minted junior in high school, an eighth grader, and a sixth grader, and we will finally be back in just two schools again next year, rather than the three from this year.

To help us make it through the year, we relied on many of our tried and true recipes, but there were also a couple of new ones thrown in there every so often. This is one I have been wanting to post for some time now, but I just never had a chance to get on and do it.

I’ve mentioned my friend Sue on this blog a few times already. You can read about Sue, her kindness, generosity and her fabulous recipes here and here.  Sue has this wonderful habit of texting me to let me know that she’s left me a treat in her milkbox. It might be a bag of the snacks I linked to just now, or it might be cookies, or a book, or in one case, a container of a new recipe she had tried out. The recipe was for a Stuffed Pepper Casserole and it was from the blog Skinny Mom. You can view the recipe here.

As soon as I tried Sue’s casserole (which was gluten free and low fat, perfect for our family’s needs) I knew I had to add it to one of our two week menu plans. Sue had made some adjustments of her own, adding in mushrooms, using the sauce she likes, and things like that, and I opted to do the same thing. We added in mushrooms and olives, used a sauce we liked, and I even decided to double the recipe, thinking we’d then have it leftover for another night’s meal.

I cooked this recipe in my new Pampered Chef stir fry pan, and as I did, I quickly realized that not only would I have enough leftover for another meal that week, but I actually had enough for two full casseroles: one for that week with leftovers and one to bag up into a large-sized ziploc freezer bag and freeze for a future night. It would just need to be thawed out and baked with cheese on top.

I also tried out a new gluten-free biscuit mix which we flavored with a garlic powder and butter topping, and that went over well too. All in all, I had a new, delicious meal and I had enough for a whole second meal as well. It was a win-win for us. I would most definitely make this meal again in the future. Anyone who loves stuffed peppers or even American Chopped Suey, would love this recipe too! I encourage you to try it, and I thank Sue for sharing it with me!

What’s for Dinner Wednesday: Two weeks of meals…almost

Last week I saw the funniest post on Facebook, shared by a friend but originally from Modern Mommy Madness, and it reminded me of our weekly scrambles to get our meals planned and prepped. It made me laugh out loud, literally, and I instantly shared it on Facebook myself. We try very hard to stick to a budget and we try very hard to make a meal plan for two weeks at a time so that we can stick to that budget, but some weeks it is just so hard, and we’re just barely pulling some sort of meal together.  This graphic put the reality check right out there, and I loved it.

So this week, instead of two weeks of meal ideas for you, I’ve got ten. By the time we got our meal plan together and shopped for it, we were down to ten days instead of 14. I’d say I’d share with you the other four, but I barely remember what we ate last night, nevermind ten days ago. I think I do remember a lasagna and a shepherd’s pie in there somewhere, a chicken pot pie made an appearance as well, but for now, we have ten meals. The kids have been helping with the meal planning, putting in their favorite meal requests, which has helped us come up with two weeks of meals every time. Hopefully this list will help to jump-start your own meal planning for the next couple of weeks!

  1. Oven roasted chicken dinner, stuffing, potatoes, gravy, cranberry sauce
  2. Fajitas
  3. California chicken (chicken sandwiches with melted cheese, avocado, and sprouts if desired)
  4. Homemade pizzas (we did Hawaiian, plain cheese with sauce, and BBQ chicken this time)
  5. Ravioli
  6. Sloppy Joes
  7. Chicken and Broccoli quiche (recipe here)
  8. Chicken and Mushrooms in white wine sauce (recipe here)
  9. Sweet and Sour Meatballs with egg noodles (recipe here)

It’s June 1!
We’re in the home stretch for the end of the school year; a busy time for us adults with our work in the schools and as parents of school aged kids, but also a busy time for the kids at school and in all their after school activities.

We can do it though, we’re almost there.

For us school ends on June 17 and for my husband’s district, it ends an entire week later, but at least the bulk of our family will be done with a lot of our stress by June 17.

I have not had a ton of extra typing time to devote to my blog, which is typical for this time of year, but to make up for it I’m going to share with you two weeks of meal planning ideas, just in case you’re as stressed in May and June as we are.

I hope that it gives you some inspiration for what to have for dinner over the coming two weeks.

TWO WEEKS OF MEALS

Day 1: Eggplant Parm with pasta and salad

Day 2: BBQ Ribs and Chicken with cole slaw, baked beans, and rice pilaf

Day 3: Chicken and Broccoli Pasta

Day 4: Baked stuffed fish with red potatoes

Day 5: California Chicken sandwiches (grilled chicken with avocado and melted cheese)

Day 6: BBQ Pulled Pork in the crock pot

Day 7: Dinner out (Friday night)

Day 8: Baked Chicken Dinner with stuffing, cranberry sauce and mashed potatoes

Day 9: Homemade Soup (we always offer sandwiches on the side, like grilled cheese, but it’s not often that anyone wants anything besides the soup.)

Day 10: Breakfast for Dinner: French Toast

Day 11: Pasta with Sauce

Day 12: Marinated steak tips

Day 13: Pork Chops with homemade apple sauce

Day 14: Quesadillas and Burritos

Two weeks ago, for my What’s for Dinner Wednesday post, I shared with you our two week menu plan for the following two weeks. The post was very well received. I had so many people come up to me in person, thanking me for taking the time to share some menu ideas and inspiring them to create their own menus or inspiring them to try something new. Therefore, I thought I’d share again this week since it’s a new two-week cycle here at our house.

Meal planning at our house can happen at any time that we have about a half hour or so. We adults get our calendars out, figure out what nights we’re in, out, busy and not, and we start our planning. This time we spent about 45 minutes on a Saturday morning when all of our kids were out of the house at the same time. From there, I went right to the store(s) I needed in order to get everything for our menu “in stock.” I don’t love having to do lots of trips during the week to pick things up because I always see lots of things I “need” while I’m there. However, I won’t lie, those weeks do happen here, and when they do, we just deal with it as it comes. Not every week will work out so perfectly.

For the most part, we were able to stick to our menu for the whole two weeks prior, but there were a few switcharoos, and for those, we either skipped something all together or we saved it for this two-week cycle, so you may seem some repeats. And in general, there may just be some repeats because those choices work well for our family; they’re fast or they’re something everyone likes, or something like that.

I also had the pleasure of taking part in my friend Marica’s Dinners Done meal making and freezing party on Saturday night, so I had four meals automatically prepped and frozen that I could add to this menu plan. She’s a great Pampered Chef consultant, and if you’re local and you’d like to participate or host one of her Dinners Done meal prep events, please contact me and I’ll connect you to her. There are several menu options to choose from and you can either prep ahead ten meals or four. I chose to do four, and I am excited to try them out over the next couple of weeks!

Saturday: Hamburgers and hot dogs..easy peasy and we had a late afternoon ice cream social at church, so we didn’t want a big dinner. Technically ice cream *was* dinner.

Sunday: Wonton Lasagnas I had been craving these! We hadn’t had them since the winter and early spring months and they were a new find last year. They were a hit and we have enough leftover for another whole meal. If we don’t use the meal this first week, we’ll freeze them for the future.

Monday: Homemade chicken soup and homemade bread in the bread machine (coincidentally, three out of five of us were feeling under the weather on this night, and the soup was a perfect menu choice for us.)

This meal was tasty and a good way to combine a lot of things I had on hand.

Tuesday: Kielbasa with cabbage and noodles

Wednesday: Grilled chicken

Thursday: Meatballs in lemon basil sauce (from our make ahead meal party)

Friday: Pizza (olive/cheese, meatball/cheese, ham and pineapple) Friday nights are busy for us and this is a quick and easy meal. It’s also one of the only times we let them chill out and eat pizza in front of the TV, as a treat.

Saturday: Quesadillas

Sunday: Shepherd’s Pie (the meat for this is something I prepped ahead before school started.)

Monday: BBQ pork sliders (these are another meal from my make ahead meal party.)

Tuesday: open for any leftovers

Wednesday: Nicoise Salad (we didn’t eat this last time around so we moved it onto the menu this time around.)

Thursday: Breakfast for dinner: Fritatas we make many different kinds, but here’s one similar to a recent meal we had.

Friday: Crockpot lasagna (another make ahead meal from our party.)

Saturday: Company for dinner!

Sunday: Turkey tenderloin aka a mini-Thanksgiving dinner!
